For making this pickles three steps needs to be follow 1) drying of mango in the sun 2) pouring mangoes in the spices with mustard oil 3) giving it a rest for at least 1 to 2 months. The Punjabi style of mango pickle constitutes of spices including fenugreek seeds, fennel seeds, mustard seeds (yellow), turmeric powder, red chili powder and of course the raw mangoes. Heat the mustard oil and pour all the spices in it with the mangoes and pour the pickles in air tight jar (ensure that the pickle is dry and is air-tight) and keep it in the sun for few days and let the spices get soaked in it.
