Simple Tomato Soup

Let’s start with the every basic Soup- Tomato Soup. Follow the easy steps given below and see how easily a soup can be made!

Ingredients-

Tomatoes- 3
Onions-1
Garlic- 2
Butter
Bay Leaf- 1
Peppercorns- 1 teaspoon
Flour- 1 teaspoon
Mixed Herbs- ½ teaspoon
Sugar
Cream- 1 tablespoon
Bread- 3-4 slices

Directions-

Add butter, garlic, bay leaf, peppercorns, tomatoes, onions and salt in a hot pan. Fry them for 2-3 minutes. Next, add water and let it cook for 5 minutes.
Remove the bay leaf, and transfer the contents of pan to a blender. Make a thick paste.
Now, in the same pan, add flour, little butter and water. Add little water at a time and mix well so as to avoid formation of lumps.
Strain the tomato soup and add it to the pan. Let it boil for 3-4 minutes. Add salt, sugar and herbs. Let it boil for another 3-4 minutes. Mix cream in it.
Pour it in a bowl with a mint leaf on the top. Serve with roasted bread pieces.

Vegetable Sweet Corn Soup

One of the most common soups is the Vegetable Sweet Corn Soup. This is very simple to make and equally healthy.

Ingredients-

Cream Style Sweet Corn- 1 can
Sweet Corn Kernels- ½ cup
Water- 5 cups
Chopped Beans- ¼ cup
Cabbage- ¼ cup
Chopped Carrot- ¼ cup
Corn flour- ¼ cup
Sugar
Salt
White Pepper Powder
Chopped Spring Onions- ¼ cup

Directions-

In a kadhai, mix the cream style sweet corn and water. Switch on the flame.
Add all the chopped vegetables to this kadhai and mix. Let it cook for 5-7 minutes.
In a small bowl, mix the corn flour and little water.
Once the soup starts boiling, add little salt and sugar. Put white pepper powder as well. Mix well. Keep it for 3-4 minutes on flame so that it gets cooked properly.
Add the corn flour mixture to this kadhai and stir it. Let the soup thicken. Your soup is ready to be served!
Serve hot with some spring onions on the top.

Vegetable Clear Soup

We have seen the soup that has chopped vegetables in it. But, for some people especially for the aged people, it is difficult to chew those vegetables. So, how can you provide the same nutrients without the vegetables? Vegetable Clear Soup is the answer!

Ingredients-

Chopped Cauliflower- ¼ cup
Chopped Carrot- ¼ cup
Chopped Cabbage- ¼ cup
Chopped Tomato- ¼ cup
Chopped Capsicum- ¼ cup
Chopped Garlic- 2 teaspoons
Chopped Ginger- 2 teaspoons
Chopped Green Chillies- 2 teaspoons
Ground Black pepper
Oil
Mint leaves- 1 tablespoon
Lemon Juice- 2 teaspoons
Chopped Coriander

Directions-

In a large vessel, add all the vegetables with 4-5 cups of water. Let it boil. Once the water boils, switch off the flame.
Now, pass this mixture through a strainer. Let all the vegetable stock flow down in a bowl.
Next, in a pan, add 1 tablespoon of oil. Put the green chillies, ginger and garlic in the pan and sauté it for 2-3 minutes.
Now, add the vegetable stock, salt, pepper to this pan. Stir it continuously for 2-3 minutes and then let it cook for another 3-4 minutes.
Your Vegetable Clear Soup is ready to be served! Pour it into a bowl and top it with coriander and mint leaves. Serve hot.

Pea Soup

If you don’t like a lot of vegetables, then let’s try something that will have vegetables of your choice only! So, firstly try this Pea Soup.

Ingredients-

Frozen Green Peas- 2 cups
Ginger paste
Oil
Salt
Heavy Cream- 3 tablespoons
Water-2 cups
Cumin Seeds- ½ tablespoon
Fenugreek Seeds
Turmeric Powder- ¼ teaspoon
Lemon Juice – ½ tablespoon
Garam Masala- ½ teaspoon
Black Pepper- 1 teaspoon

Directions-

Using a little water, make a coarse paste of the green peas.
In a pan, put 1 tablespoon of oil and heat it. Add salt and ginger paste to it. Keep stirring so that everything gets mixed properly. After about 5 minutes, keep it aside.
Now, add 1 tablespoon to the pan and let it heat. Once it gets heated, add cumin seeds. If they start cracking, then add the fenugreek seeds and the turmeric. Pour in water and let it boil.
After the water starts boiling, add the peas and cream to it. Now, let it cook for about 20 minutes. Switch off the flame.
Now, add the garam masala, lemon juice and black pepper. Cover it with a lid for 2-3 minutes.

Serve hot with cream!

Sweet Potato Soup

After the Peas Soup, this is another classic Vegetable Soup made of Sweet Potato. This is very tasty and tempting as well!

Ingredients-

Sweet Potatoes- 1 cup
Oil
Cinnamon Stick
Bay Leaf- 1
Chopped Carrots – 2 tablespoons
Chopped Beans- 2 tablespoons
Cabbage- ½ cup
Salt
Pepper Powder
Leeks- 2 cups
Cream- 2 tablespoons

Directions-

At first, boil the sweet potatoes. Peel off its skin. Mash them with little water in a bowl and keep it aside.
In a hot pan, add oil, cinnamon stick and bay leaf. Next, add all the chopped vegetables along with salt. Fry them for 2-3 minutes.
Next, add the sweet potato paste, pepper and leeks to this pan. Boil it for 2-3 minutes.
Remove the bay leaf and the cinnamon stick from the pan. After turning off the flame, add some cream to it and pour it into a serving bowl.

Onion Spinach Soup

Spinach is a green vegetable which is considered to be very healthy. It has a bit of bitter taste and so it is not liked by most of us. In order to get its nutrients without having to taste its bitterness, here is a recipe for Onion Spinach Soup recipe!

Ingredients-

Chopped Onions- ½ cup
Chopped spinach- 1 & ½ cup
Chopped Carrot- ½ cup
Butter
Milk – 2 cups
Ground Black Pepper
Salt

Directions-

In a non-stick pan, melt butter and add onions to it. Fry these onions for 2-3 minutes till they change their colour.
Next, pour in water and add carrots. Cover it with a lid. Let it be like that for 3-4 minutes.
Add the spinach to this pan and let it cook for another minute while stirring continuously.
Pour the milk and keep it for cooking for 3-4 minutes. Now, switch off the flame and let the mixture cool.
Next, blend this mixture using a mixer. Once a smooth paste is made, pour it into the pan again.
Add salt and pepper. Mix well and let it cook for 2-3 minutes. Serve hot!

Drumsticks- 4
Chopped Carrots- ¼ cup
Garlic cloves
Curry Leaves
Fennel Seeds
Peppercorns
Coriander
Chopped Garlic- 1 teaspoon
Chopped Green Chillies- 1 teaspoon
Chopped tomatoes- ¼ cup
Dal Water- 2 cups
Oil
Salt

Directions-

Heat a pan with some oil in it. Add the first 7 ingredients to this pan. Let this cook for 3-4 minutes.
Next, add all the remaining ingredients. Pour in some water and let it boil for 5-6 minutes.
Add the Dal water, coconut milk and salt. Let it cook for 3-5 minutes.
Now, remove the drumsticks, curry leaves and coriander stem from the pan and put it in a mixer.
Make a smooth paste and pour it into the pan. Let the soup boil till you get a thick soup. Serve warm in winters.

Baby Corn Spinach Soup

This soup is another variation in the classic Spinach Soup. The Spinach Soup we prepared earlier was a simple one. Add a twist to it with Baby Corns!

Ingredients-

Chopped Spinach- 1 cup
Sliced Baby Corn- ½ cup
Corn Flour- 2 tablespoons
Butter
Chopped Onions- ½ cup
Vegetable Stock- 4 cups
Salt

Directions-

In 4 cups of vegetable stock, add ½ teaspoon of corn flour and mix.
Next, in a pan melt some butter. Add the onions to it and fry them a little.
Now, add spinach and baby corn and fry them for 2-3 minutes.
Pour the vegetable stock mixture into the pan and stir. Let it cook for 5 minutes.
Once it is cools properly, transfer it to a mixer bowl and blend it into a paste.

In a pan, add the paste, salt and pepper. Let it boil for another 2 minutes and then serve hot!

Ingredients-

Chopped Beetroot- 1 cup
Chopped Tomatoes- ½ cup
Butter
Garlic- 1 teaspoon
Flour- 1 tablespoon
Salt
Cream-1 tablespoon
Chopped Coriander Leaves

Directions-

Boil the tomatoes and beetroot in enough water. After they are cooked properly, make them into a paste using a blender.
Next, in a pan, mix butter, flour and garlic. After 2-3 minutes, add the paste to it. Add all the remaining ingredients to the pan and let it cook for 5-6 minutes.
Switch off the flame and transfer it to a serving bowl. Garnish with cream and coriander leaves.

Ingredients-

Shredded Cabbage- ½ cup
Dry Red Chillies- 10 pieces
Garlic cloves
Oil
Thin sliced Onion White- ½ cup
Sliced Red Capsicum- ½ cup
Lemon Juice- 2 teaspoons
Salt

Directions-

Let the red chillies soak in water for 20 minutes. Drain all the water. Keep a teaspoon of water in it. Add garlic to this and blend it into a smooth paste.
Sauté the paste for a minute in a pan with little oil in it.
Next, add the cabbage, red capsicum and spring onion whites to the pan. Mix in lemon juice, sugar and salt. Pour in 3-4 cups of water.
Let it boil for 3-4 minutes. Your Spicy Cabbage Soup is ready to be served!

Ingredients-

Chopped Garlic- 1 teaspoon
Salt
White Pepper Powder
Potatoes- ½ cup
Vegetable Stock- 3 cups
Butter
Spring Onion- 1
Chopped Onions- ½ cup
Cream

Directions-

Saute chopped garlic and onion in a pan for 2-3 minutes in little oil.
Add the chopped potatoes and leeks to the pan. Add ½ cup of stock to it.
Now, blend this mixture and again pour into the pan and pour the remaining stock. Add salt and pepper also.
Let it boil for 5-8 minutes. Pour into a bowl and garnish with cream.

Cinnamon- ½ teaspoon

Lemon Juice- 2 tablespoons
Cream
Sugar

Directions-

In a pan, melt some butter. Add peppercorns, ginger and cinnamon to it.
After this, add the flour, carrot, bell pepper and sugar. Mix it properly.
Pour in water along with lemon juice and salt. Stir and let it boil for 5-8 minutes.
Now, let it cool and then make a thick paste of it. Transfer it to the pan again and let it boil for 2-4 minutes.

Add the onions, cabbage and carrots. Saute them for about a minute.
Pour in the vegetable stock, lemon juice and the corn flour mixture to this pan. Add salt. Add the coriander leaves as well.

Ingredients-

Coconut Milk- 1 cup
Water- 4 cups
Slit Green Chillies- 2 teaspoons
Sliced Ginger- 1 teaspoon

Directions-

In a large vessel, mix the first six ingredients along with water.

Milk- 2 tablespoons

Pepper Powder
Butter

Directions-

In a pan, add butter and fry the onions and garlic in it.
Next add the carrots. Let them cook for 2-3 minutes.
Add the cauliflower florets and the pepper powder. Pour in some water. Once they get cooked, blend them into a paste using a mixer.
Pour in milk. Add the nutmeg powder and fresh cream to this paste and serve hot.

Ingredients-

Noodles- ½ cup
Mixed Sprouts- ½ cup
Sliced Red Capsicum- ¼ cup
Sliced Yellow Capsicum- ¼ cup
Spring Onion White- ¼ cup
Corn Flour- 2 teaspoons
Vegetable Stock- 4 cups
Salt
Chopped Spring Onions- 1 tablespoon
Ground Black Pepper

Directions-

In a tablespoon of water, mix the corn flour. Mix well and keep it aside.
Next, in a hot pan, add the mixed sprouts, capsicums and spring onion whites. Fry them for a minute.
Now, pour in the vegetable stock and the noodles. Add salt and mix well. Let it cook for 10-15 minutes so that the sprouts and the noodles are cooked properly.
Pour the corn flour mixture and pepper to this mixture. Stir occasionally and let it cook for 1-2 minutes.

Moong Dal Soup

Ingredients-

Moong Dal- 3 tablespoons
Chopped Onions- ¼ cup
Chopped Carrots- ¼ cup
Corn Flour- 2 tablespoons
Chopped Garlic- 1 teaspoon
Cooked Barley- 2 tablespoons
Salt

Directions-

Wash the Moong Dal properly and keep it in water for 2-3 hours.
After draining it, combine it with onions, carrots and water in a pressure cooker.
Let it cook for 2 whistles of the cooker.
After it is cooked, make it into a paste using a blender.
In a small bowl, mix corn flour with 1 tablespoon of water and keep aside.
In a non-stick pan, sauté the onions and garlic with oil for a minute.
Next, pour corn flour mixture and the Moong Dal paste to it and let it cook on low flame for 3-5 minutes.

Add this mixture to the boiling soup in the pot.

Ingredients-

Bay Leaf- 1
Cinnamon-1
Cardamom- 1
Cloves- 3
Peppercorns- 1 teaspoon

Ginger
Garlic
Green Chillies- 1 teaspoon

Chopped Carrots- ¼ cup

Chicken Bones- ¼ cup

Boneless Chicken pieces- ¼ cup
Lemon Juice- 2 tablespoons

Directions-

Add all the ingredients except the last two in a pressure cooker. Let it cook for 5 whistles.
After this, remove the water and the chicken bones.
Add the boneless chicken pieces and let it cook for 5-10 minutes.
Put the lemon juice and coriander in it.
Once it is cooked properly, serve it in a bowl. Your Chicken Soup is ready!
