
1.Stuffed capsicum
A recipe of vegetables stuffed in capsicums, you can have it as a starter. Chop carrots and potatoes and boil along with peas until tender. In pan splutter cumin, sauté onions and garlic, add spices, add the cooked vegetables. Deseed the capsicums and stuff with the vegetable mash and then cook in a pan until done. You can bake them as well.

2.Capsicum fried rice
A new way to give a twist to your rice, with the aroma of capsicum. Cook rice and keep aside. In a pan splutter cumin, cardamom, cinnamon, bay leaves, cloves, etc. and sauté onions and chilies. Add ginger -garlic paste, add chopped green red and yellow capsicum, spices and chopped mint and coriander cook till done. Add the cooked rice.

3.Capsicum cheese toast
Giving a twist to the regular toast try this variation. In a pan splutter and sauté garlic and chilies, and mix chopped capsicum. In a baking tray place 4-6 slices, add a layer of the capsicum mix, then cheese. Bake till cheese melts.
4.Capsicum salan
It is a dish; capsicum cooked with cashews. In a pan, sauté onion and add ginger-garlic paste, add tomatoes and cashews then puree them. Cook together peas and capsicum. Add the puree and spices. Serve hot with chapattis or biryani.

5.Capsicum chutney
Not only as a main dish capsicum can also be used to prepare a side dish. Take fried gram and capsicum, shredded coconut, ginger, lemon juice, chilies, and grind. Temper with mustard, chilies and curry leaves. Serve with breadsticks.

6.Capsicum egg bhurji
Make your eggs healthier and tastier with this dish. In a pan sauté cumin, then add chopped garlic. Mix chopped capsicum. Beat 2-3 eggs and pour into the cooked capsicum. Serve hot with chapattis or bread.

7.Capsicum with bananas
Raw bananas stuffing in hollowed capsicum, gives capsicum a different life and taste. Take green bananas and boil them with their skin. Boil potatoes. In a bowl mash together bananas and potatoes, fried onions, coriander, and spices. Fill deseeded capsicum with this mixture and cut into slices, shallow fry until crisp.

8.Baked mushroom and capsicum
This is a great combination of mushrooms with capsicum and white sauce, give a party to your taste buds. Prepare white sauce and keep aside. In a pan cook capsicum with onions and mushrooms then add the white sauce. Transfer to a baking dish sprinkle cheese.

9.Peperonata
This is an Italian dish with bell pepper, and you can store it as well. Take red, yellow and green capsicum, apply oil and sprinkle pepper and salt and bake. Peel the skin and deseed from the capsicum and cut into strips. Sauté garlic and onions add the capsicum, basil, and chopped parsley. Serve with bread, and store the rest.

10.Red capsicum soup
If you are tired of the usual capsicum dishes, try this soup of capsicum, it’s delicious and healthy. In a pan sauté onions, chopped red capsicum, and spices. Mix vegetable stock and blend. Garnish and serve hot.

11.Eggs in capsicum
Boiled eggs cooked in capsicum puree! Give the taste of capsicum to your eggs through this dish. In a pan, sauté boiled eggs and set aside. In the same pan sauté ginger-garlic paste, onions, and capsicum. Add pureed onion and tomatoes, spices, cashew paste, and cook. Put in the eggs. Garnish and serve hot.

12.Capsicum kayras
Capsicum cooked with jaggery and coconut. Try this sweet and tangy take on capsicum. Take roasted coconut and sesame seeds, along with sautéed Bengal gram, coriander, fenugreek seeds, chilies and grind together. Splutter peanuts and cook potatoes, add the ground mixture, water, and jaggery. Add chopped capsicum and tamarind pulp.

13.Pasta in capsicum sauce
Try this version of pasta cooked in capsicum sauce. You can add chicken or shrimp pieces. Roast red capsicums and make a puree. You can add tomatoes as well. Then in a pan sauté chopped garlic and chilies mix the cooked pasta and sauce. Serve hot.

14.Broken wheat salad with roasted pepper and chick peas
Broken wheat is as healthy as they come, give it a different taste with capsicum. Roast red and green capsicum and over a medium flame before brushing them with oil. Take cracked wheat and soak them in hot water then drain. Mix the roasted capsicum, broken wheat, chopped garlic and parsley, chick peas, salt, and lemon juice. Refrigerate and serve chilled.

15.Roasted capsicum with spaghetti stuffing
Try a different filling from the regular, with spaghetti. Roast capsicum, remove the tops, deseed & hollow them, and peel the skin. Cook spaghetti and toss with a seasoning of your choice. Fill in the hollowed capsicum with spaghetti and bake.

16.Capsicum eggs on toast
Want to have something different with your eggs on toast? Use capsicum. Remove the top, hollow and deseed the capsicum (take different colored) and slice them. Roast them on and break eggs in the space, cook on both sides. Serve on toast.
17.Spanish tortilla with capsicum
Cook together capsicum, potatoes, and onions. Beat eggs with chili sauce, salt, and pepper. Put the cooked veggies in a baking dish, pour in the eggs and bake. Garnish and serve.

18.Pickled capsicum
In a pan, prepare a blend of vinegar, water, spices, salt and bring to boil. In a clean jar filled with the capsicum pour in this boiling mixture. Refrigerate for one week and then use.

19.Roasted peppers Dip
Roast the capsicum, let them cool, peel the skin and hollow them. Finely chop them or process in a processor. Add spices and process again. Season with salt and vinegar.

20.Spinach and red pepper frittata
Wilt the spinach and chop. In a pan cook the chopped capsicums and garlic, then add the spinach. Whisk eggs, salt, pepper, milk, and the capsicum and spinach. Pour in a pan and cook both sides until done. Cut into bite sizes and serve.
