1.Pumpkin muffins
Savor these muffins made out of pumpkins. In a bowl whisk together ginger, nutmeg, flour, cinnamon, baking powder, cloves, and salt. Add eggs only after the mixture including butter and sugar turns fluffy. In the butter add vanilla and pumpkin puree. Before folding the dough, add the flour mixture. Pour it into the muffin tin and bake, serve warm. You can store the left overs in an airtight container.
2.Pumpkin Chili
Make this dish of pumpkin, it goes with both Indian bread and rice. Peel turnips, pumpkin and dice them. In a pan whisk cornmeal, add the diced vegetables, bell peppers, garlic, onion and tomato paste, cook. Pour vegetable stock, and then mix diced tomatoes, corn, beans, chili powder, cinnamon, and sauce. Cook until the pumpkin and turnips are tender.
3.Pumpkin curry
A dish to have with rice, try this pumpkin curry. First, peel the pumpkin and slice them. Cook together with onions, spices, red peppers, coconut milk, and water, until tender. Garnish with parsley, coriander, and cheese, serve hot.
4.Pumpkin pie
Try this dessert, a perfect way to complete your meal. Line a pie crust on a pie pan and chill for a half an hour then bake. Prepare a puree out of the pumpkin, add spices and sugar then cook till the spices start giving aroma. Whisk in cream and milk after removing from heat, then the eggs and vanilla. Pour the pumpkin mix into the pie crust and bake.
5.Pumpkin porridge with rice dumplings
It is a Korean dish made up of rice dumplings. To prepare the porridge steam the pumpkin till tender. Roll balls out of rice powder dough for the dumplings then cook. Blend the pumpkin with salt, water, sugar, and rice powder, and then cook over medium heat. While serving pour the porridge first then add the dumplings from the top.
6.Pumpkin crumb cakes
These crumb cakes made out of pumpkin are great as a dessert. First; prepare a dry mixture of flour, baking powder, salt, and sugar. In another bowl, beat the butter then the eggs and vanilla, then the dry mix. Line the dough in a baking mix then pour the puree of pumpkin, eggs, milk, spices, and sugar. Make crumbs from the flour mixture and butter, then sprinkle on the cake. Bake.
7.Pumpkin & Ricotta pasta casserole
A new way to have pasta in this casserole. First, cook the pasta until just done. Peel and boil the pumpkin and then make a puree. Mix the pumpkin puree, ricotta, eggs, and yogurt. Then add pepper, salt, ginger, and nutmeg. Combine the pasta and the pumpkin mixture with parmesan. Bake till the cheese turns golden brown.
8.Miso Pumpkin soup
Peel the pumpkin and cut sweet potato into pieces. In a baking dish combine the pumpkin and sweet potatoes and garlic, season with olive oil, salt, and pepper. In a pan cook ginger and shallots, vegetable stock and miso. Add the vegetables. Puree them together, and serve with garnishing.
9.Pumpkin tortilla soup
In a pan cook onion, chopped tortilla, and cilantro. Add cumin and cayenne and sauté. Then mix vegetable stock, pumpkin, tomatoes, and simmer. Fry tortilla chips and serve with the soup.
10.Pumpkin pizza
In a pan caramelize the onions. Add garlic, shallot, pumpkin puree, thyme and onions in a bowl along with Parmesan, salt, and pepper. Prepare the pizza dough, put the pumpkin mixture and top with the caramelized onions. Then bake the pizza.
11.Pumpkin fritters
To make: take pumpkin puree in a bowl with and eggs. In another bowl prepare a dry mix of flour, baking powder, salt and add to the puree, adding cheese, pepper, and rosemary. Heat oil and fry scoops of the mixture. Serve hot.
12.Pumpkin and lentil salad
Cook soaked and drained lentils until tender. Roast cubes of pumpkin after brushing with oil. In a bowl mix the roasted pumpkin, the lentils and a seasoning of lemon juice and olive oil. Sprinkle feta cheese and serve.
13.Pumpkin biscuits with sage
Prepare a dry mixture of flour, baking powder, salt, baking soda, and sage. In another bowl mix pumpkin puree and yogurt then add the dry mixture and prepare the dough. Roll and cut out biscuit shaped discs. Bake them, let cool and serve.
14.Pumpkin cornbread waffles
For the waffles; in a bowl, take a mixture of eggs, pumpkin puree, baking powder, salt, butter, and pepper. Then mix the almond milk. Add cornmeal and flour and combine. In a waffle iron cook the mixture until done. Serve with syrup or eggs.
15.Pumpkin dip
To prepare the dip, take cream cheese, cheddar cheese, pumpkin puree, chopped pecans, fried and crumbled bacon, onions, cinnamon, and salt. Process all these ingredients in a food processor, and your dip is ready. Garnish with green onions.
16.Pumpkin mashed potatoes
Take potatoes and pumpkins, peel and cook until tender. In a bowl mix butter and cream cheese, the cooked and mashed potatoes and pumpkins, milk, salt, and pepper. Process everything in a processor till smooth. Heat in a pan before serving and garnish with thyme.
17.Chicken bacon pumpkin gnocchi
Firstly, cook the gnocchi and keep aside. Fry the bacon in a pan and set aside, in the same pan fry the diced chicken with salt and pepper and remove. Again in the same pan add cream cheese, pureed pumpkin, garlic powder, paprika, and Parmesan. Add the gnocchi, bacon, and chicken. Garnish with green onions and serve.
18.Pumpkin and spinach spaghetti
Peel and cube pumpkin then bake until golden brown. In a pan sauté garlic and chilies and add the mashed pumpkin. Cook spaghetti and then combine with spinach and the pumpkin. Use salt, pepper and lemon juice for seasoning. Use garnishing of your choice and serve.
19.Pumpkin lasagna
Try this freshly baked lasagna, for a chilly day. In a pan, sauté garlic, onions, and mushroom, add ground turkey, when done, keep aside. In a bowl mix pumpkin puree and ricotta. Place a layer of noodles in a baking dish, with the pumpkin mixture and top with the turkey, then repeat the step. Sprinkle with mozzarella and bake.
20.Stuffed pumpkin
You need baby pumpkins to make this dish. In a pan, take rice, lentils, mushrooms, carrots, celery and vegetable stock and bring to boil. Make incisions on the pumpkins and bake. Remove the top and seeds and fill with the lentil mixture. Bake again, till the pumpkin turns brown.
