
1. Pumpkin Pickle Recipe
Ingredients:
- Pumpkin–1 kilogram
- Mustard powder- 30 grams
- Turmeric- a spoonful
- Fenugreek seeds– a spoonful
- Red chilli pepper-1 cup
- Mustard Oil–1/2 litre
- Salt–as per taste
Preparation:
Cut the pumpkin into small pieces. Soak the pieces in hot water for half an hour. Drain the pieces and dry them in the sun for one hour. Mix the pieces with mustard powder, turmeric, fenugreek seeds, red chilli pepper, salt and with oil. Keep the mix aside for 3 days. Every day stir the pickles. The Pumpkin Pickle is ready to serve with rice.

Lady Finger Pickle Recipe
Ingredients:
- Lady fingers- 1 kilogram
- Lemon juice- 1 cup
- Salt- as per taste
- Mustard powder- 30 grams
- Turmeric- a spoonful
- Fenugreek seeds– a spoonful
- Red chili pepper-1 cup
- Mustard Oil- 1/2 litre
- Curry leaves- 1 cup
Preparation:
Cut the lady fingers into long slices. Mix the slices with mustard powder, turmeric, fenugreek seeds, red chili pepper, and salt. Take the pan and heat the oil and curry leaves. Add the ladyfingers, mix into the oil, and fry for 2 minutes. Let it cool for 10 minutes. Finally, add lemon juice and store in an airtight jar.

3. Mixed Vegetable Pickle Recipe
Ingredients:
- Cauliflower pieces- 1 cup
- Carrots pieces- 1 cup
- Raw Banana pieces- 1 cup
- Potato pieces- 1 Cup
- Mustard Oil- 1/2 liter
- Lady fingers- 1 kilogram
- Lemon juice- 1 cup
- Salt- as per taste
- Mustard powder- 30 grams
- Turmeric- a spoonful
- Fenugreek seeds- a spoonful
- Red chili powder- 1 cup
- Ginger and Garlic Paste- 1 cup
Preparation:
Wash the cauliflower, carrots, potato, lady fingers and raw banana pieces, and half cook them with salt. Fry the ginger and garlic paste in oil for 2 minutes. Add the vegetable pieces. Add lemon juice, mustard powder, fenugreek seeds, red chili powder. Finally transfer the pickle into a clear jar and store in a warm place.

4. Lemon Pickle
Ingredients:
- Lemons- 12
- Salt- as per taste
- Mustard powder- 30 grams
- Turmeric- a spoonful
- Fenugreek seeds– a spoonful
- Red chili powder-1 cup
Preparation:
Cut the lemons into small pieces. Mix them with salt and turmeric, and marinate the pieces for 3 days in a clean and air tight jar. Stir the pickle twice daily. After 3 days, take out the pickle, mix it with salt, mustard powder, red chili powder, fenugreek seeds, turmeric and oil. Lemon pickle is ready for serving with rice.

5. Gooseberry Pickle Recipe
Ingredients:
- Gooseberry– 1 Kilogram
- Cumin powder- 1/2 tsp
- Sesame seeds Powder- 1/2 cup
- Lemons Juice –1 cup
- Salt–as per taste
- Mustard powder- 30 grams
- Turmeric- a spoonful
- Fenugreek seeds– a spoonful
- Red chili powder-1 cup
Preparation:
Deep fry the gooseberry in oil till the color changes to a golden brown. Transfer the fried gooseberry into a bowl and add- mustard powder, turmeric, fenugreek seeds, red chili powder, cumin powder, lemon juice, salt and sesame seeds powder. Mix well with oil. Keep aside for 1 hour. Tasty Godavari style Gooseberry Pickle is ready.

6. Onion Pickle Recipe
Ingredients:
- Onion – 1 Kg
- Cumin powder- 1/2 tsp
- Sesame seeds Powder- 1/2 cup
- Lemons Juice- 1 cup
- Salt- as per taste
- Mustard powder- 30 grams
- Turmeric- a spoonful
- Fenugreek seeds– a spoonful
- Red chili powder- 1 cup
Preparation:
Peel the outer layer of the onion and cut into 4 pieces. Marinate the onion pieces with salt and turmeric overnight. Transfer the onion mix into a clean jar, and add all spices and lemon juice. Finally add oil and keep aside for an hour. By then all the spices will have been absorbed by the onion pieces. Onion Pickle is ready

7. Beetroot Pickle
Ingredients:
- Beetroot- 1 kilogram
- Mustard powder- 30 grams
- Turmeric- a spoonful
- Fenugreek seeds- a spoonful
- Red chili pepper- 1 cup
- Mustard Oil- 1/2 liter
- Salt- as per taste
Preparation:
Cut the beetroot into small pieces. Soak the pieces in hot water for half an hour. Drain the pieces and dry in the sun for one hour. 8. Tomato Pickle
Ingredients:
- Tomatoes- 1 kilogram
- Mustard powder- 30 grams
- Turmeric- a spoonful
- Fenugreek seeds- a spoonful
- Red chili pepper- 1 cup
- Mustard Oil- 1/2 litre
- Garlic pods
- Salt- as per taste
Preparation:
Switch on the stove, place the non-stick pan on it. Add the oil and garlic pods and mix well. Add chopped tomatoes until the oil separates from tomatoes. Add tamarind and cook for 5 minutes. Make sure tamarind and tomatoes become soft. Cool for some time. Take a mixer jar and add this mixture along with chili powder, fenugreek powde and salt. Grind it to a paste. The tasty Tomato Pickle is now ready.

9 Green Chilly Pickle
Ingredients:
- Green Chilly- 1 kilogram
- Mustard powder- 30 grams
- Turmeric- a spoonful
- Fenugreek seeds– a spoonful
- Red chili pepper- 1 cup
- Mustard Oil- 1/2 liter
- Tamarind- 2 cups
- Salt- as per taste
Preparation:
Switch on the stove, place the non-stick pan on it. Add the oil and garlic pods and mix well. Add chopped chilly and cook it until oil separates from it. Add tamarind and cook for 5 minutes. Make sure the tamarind becomes soft. Cool for some time. Take a mixer jar and add the pan mixture as well as, chili powder, fenugreek powder and salt. Grind it to a paste. Tasty chilli pickle is ready.

10. Carrot Lemon Pickle
Ingredients:
- Carrot- 1 Kilogram
- Cumin powder- 1/2 tsp
- Sesame seeds Powder- 1/2 cup
- Lemon Juice- 1 cup
- Salt- as per taste
- Mustard powder- 30 grams
- Turmeric- a spoonful
- Fenugreek seeds– a spoonful
- Red chili powder- 1 cup
Preparation:
Wash the carrot in hot water, dry and keep aside. Deep fry the carrot in oil till the color changes to a golden brown. Transfer the fried carrot into a bowl and add mustard powder, turmeric, fenugreek seeds, red chili powder, cumin powder, lemon juice, salt and sesame seeds powder. Mix well with oil. Keep aside for one hour. Tasty Godavari style Gooseberry Carrot Pickle is ready.

11. Lotus Stem Pickle Recipe
Ingredients:
- Lotus stem- 1/2 kg
- Mustard powder-6 teaspoons
- Red chili pepper -3 teaspoons
- Turmeric-2 teaspoons
- Salt-1/3 cup
- Mustard Oil -1 cup
Preparation:
Cut lotus stems into pieces. Boil in water until stem becomes soft. Drain the water and dry in sunlight for half an hour. Now coat the stems with mustard powder, red chili pepper, turmeric and mustard Oil. Use the pickle after 3 days with rice.

12. Cauliflower Carrot Pickle
Ingredients:
- Carrots- 1/2 kg
- Cauliflower- 1/2 kg
- Oil- 1 cup
- Turmeric -2 teaspoons
- Chili powder- 2 teaspoons
- Mustard seeds- 2 teaspoons
- Salt- to taste
Preparation:
Wash and cut the carrots and cauliflower into pieces. Boil them and drain the water. Now add turmeric, oil and chili powder and mix well. Finally sprinkle the mustard seeds. Add lemon (optional). Place the pickle aside for 2 days. Tasty Cauliflower and Carrot pickle is ready.

13. Cabbage Pickle
Ingredients:
- Cabbage- 1 kg
- Coriander- Half cup
- Oil- 1 cup
- Fenugreek seeds
- Turmeric- 2 teaspoons
- Chili powder- 2 teaspoons
- Mustard seeds- 2 teaspoons
- Salt-to taste
Preparation:
Wash the cabbage, remove the skin and cut into small pieces. Marinate the cabbage pieces in salt for 2 hours. Drain the excess water from the cabbage. Fry the mustard and fenugreek seeds and then grind them. Now mix the cabbage pieces with the fenugreek seed powder, mustard seed powder, salt and turmeric, and mix well. Fry the mixture in oil for 5 minutes. Transfer the pickle into a serving jar and keep in the fridge.

14. Dry Dates and Lemon Pickle Recipe
Ingredients:
- Dry Dates pieces- 250 grams.
- Red chily powder- 5 teaspoons
- Lemon- 10
- Coriander powder- 2 spoons
- Aniseed powder- 5 teaspoons
- White cumin powder- 2 teaspoons
- Lemon juice- 1 cup
- Salt- to taste
Preparation:
Boil the dates till they become soft. Remove the seeds from the dates and dry them. Mix the dates with coriander powder, lemon pieces, aniseed powder, red chili powder and white cumin powder. Pour lemon juice. Finally add the salt as per taste. Steep the pickle for 3 days. Tasty Dates Pickle ready.

15. Ginger pickle
Ingredients:
- Ginger- 250 grams
- Red chili powder- 5 teaspoons
- Coriander powder- 2 spoons
- Aniseed powder- 5 teaspoons
- White cumin powder- 2 teaspoons
- Tamarind- 1 cup
- Fenugreek seeds- 1/2 cup
- Salt- to taste
Preparation:
Remove the dirt from the ginger. Peel it and cut into pieces. Prepare the tamarind juice. Powder the fenugreek seeds. Fry the ginger pieces with oil on a low flame. Take the mixer, grind the ginger pieces, and prepare a paste. Fry the ginger paste in oil. Add fenugreek powder, cumin powder, coriander and salt. Cook for 5 minutes. Put into serving jar and keep in dry place.

16. Mango Pickle
Ingredients:
- Mango pieces- 1 kg
- Coriander- 1/2 cup
- Oil-1 cup
- Fenugreek seeds
- Turmeric- 2 teaspoons
- Chili powder- 2 teaspoons
- Mustard seeds- 2 teaspoons
Preparation:
Wash and wipe the mango well, with a cotton cloth. Cut into cubes. Peel the layer. Take a dry, wide bowl and add the mango pieces, fenugreek powder, and red chili powder. Add oil and mix well by hand. Add rock salt and mix well. Soak for 1 day. The next day the oil will come out. Then mix the peel and the garlic flakes and add them in the pickle. And soak for 3 days. Transfer it into a clean jar. Cover it with a cotton cloth and tie it. Keep in dry place. Mango Pickle is ready.

17. Gongura Pickle
Ingredients:
- Gongura Leaves-1 kg
- Curry leaves- 1/2 cup
- Oil- 1 cup
- Fenugreek seeds
- Turmeric- 2 teaspoons
- Chili powder- 2 teaspoons
- Mustard seeds- 2 teaspoons
Preparation:
Heat the pan and add oil. Fry the green chili, sautéing it for 5 minutes, and then take it out. In the same oil, fry the gongura until dark and smooth, then take it out. Peel the onions. Grind the onions and chilli in a mixer jar, and add cooked leaves and mix well. Finally add salt and mix well. Decorate with onion pieces and curry leaves. Tasty Gongura Pickle is ready.

18. Cucumber Pickle
Ingredients:
- Cucumber- 1 kg
- Oil-1 cup
- Fenugreek seeds- 1/2 cup
- Turmeric- 2 teaspoons
- Chili powder- 2 teaspoons
- Mustard seeds- 2 teaspoons
Preparation:
Heat the oil in a pan Fry the urad dal. Add seasoning and fry for 2 minutes. Add curry leaves and fry for 1 minute. Fry green and red chili. Then grind all the fried ingredients, with the tamarind, cucumber and fenugreek seeds to make a paste. Add cucumber pieces in the paste and finally add curry leaves. Tasty and spicy cucumber pickle ready to serve.

19. Drum Sticks Pickle
Ingredients:
- Drumsticks- one cup
- Oil- 1 cup
- Chili powder- 2 spoons.
- Fenugreek seeds- 1/2 cup
- Mustard seeds- 1 spoon
- Turmeric- 1 spoon
Preparation:
Take the drumsticks with flesh and cut into pieces. Deep fry the drumstick pieces in oil till they turn into a brown color. Put the fried drumsticks in a bowl and add tamarind paste, red chili powder, salt and garlic paste. Mix it up well. Finally, season the pickle with mustard seeds, curry leaves and oil. A tasty and healthy Drumstick Pickle is ready.

20. Eggplant Pickle
Ingredients:
- Eggplant- 1 kg
- Coriander- 1/2 cup
- Oil- 1 cup
- Fenugreek seeds
- Turmeric- 1 spoons
- Mustard seeds- 1 spoons
- Chili powder- 1 spoons
Preparation:
Wash the eggplant and cut it into pieces. Deep fry the eggplant pieces in oil till they turn a brown color. Then fry the fenugreek seeds, mustard seeds, cumin seeds, onions, red chilli and curry leaves. Grind the eggplant pieces and all the fried ingredients. Add salt and lemon juice. The tasty eggplant pickle is ready.
