1.

Paneer Cutlets

Easy to make and easy to serve! This lip smacking starter will make your guests keep asking you for your recipe.

Ingredients:

500g Cottage cheese
Coriander leaves
A cup of boiled peas
Chaat masala
3-4 Boiled potatoes
Bread crumbs
Salt to taste
Oil for frying

Method: In a bowl take boiled potatoes and mash them after peeling their skin. Add salt to taste, chaat masala, coriander leaves and boiled peas. Cut the paneer in cubes and stuff one cube in each Cutlet made of the mix in step above. Now in a plate place the bread crumbs and roll the Cutlet in them. In a pan heat some oil and shallow fry the Cutlets.

Serve with homemade dips or tomato ketchup.

Chicken Mini And Grilled Sandwiches

Ingredients:

Minced chicken
Salt
Turmeric
Curd
Sandwich Bread
Red chilli powder
Clove, cumin, bay leaf, cinnamon, pepper powder- garam masala

Method: Take about 500g minced Chicken. Add about a cup of curd and a spoon of each: garam masala, salt, turmeric, red chilli powder.Marinate and keep in the refrigerator for about 2 hours. Cut the bread slice in four triangles by running the knife along the diagonal. Take a triangle, spread the Chicken filling and top of it another slice triangle. Make as many you would need. In the oven set the temperature around 120˚ and grill for 10 minutes and then change the side and again grill for 10 minutes.

Serve with mayonnaise.

Fiery Fried Chicken

A mouth watering starter!!

Ingredients:

Chicken (boneless)
Salt
Turmeric
Curd
Tomato puree
Red chilli powder
Clove, cumin, bay leaf, cinnamon, pepper powder- garam masala

Method: Marinate the chicken with curd and spices mentioned above. Keep in the refrigerator for about 45 minutes. Now take it out and add tomato puree and red chilli sauce and chilli flakes. In a pan heat oil and deep fry the Chicken. Serve hot with salad and green chilli dip.

Dhokla

A sweet and sour snack which does not have any eleventh hour cooking.

Ingredients:

Gram flour 500g
Baking Soda
Curd
Turmeric powder
Salt
Lemon
Sugar
Sesame seeds
Curry leaves

Method: In a bowl mix the gram flour, besan, curd, one tea spoon turmeric powder, half a tea spoon salt, one fourth tea spoon soda, and whisk the mixture to aerate it. In a utensil boil some water and let steam evolve. In a flat container pour the mixture of Dhokla and place this carefully in the steaming utensil. Let it cook for 20-25 minutes. In a small frying pan fry some curry leaves and sesame seeds and pour the fry over the Dhokla and cut the pieces.

White Gram
Salt
Red Chilli powder
Sev
Papdi
Tamarind chutney
Onion
Cucumber
Coriander
curd

Method: Boil white gram with water, salt, turmeric and chilli powder. Take the boiled gram. To this add chopped cucumber and onions and whipped curd.  Add sev, papdi, tamarind chutney and garnish with coriander.

Serve quickly before it gets soggy!!

Aloo Bondas

Ingredients:

Boiled potatoes
Turmeric
Curry leaves
Sesame seeds
Gram flour
Red chilli powder
Salt
Coriander

Method: Take skinned boiled potatoes and to it add turmeric, salt, red chilli powder and mash them well. In a separate bowl make a paste of gram flour and salt. Make balls of the mashed potato. Dip them in the gram flour and fry them. Serve with tangy dips!!

Bread Pizza

Ingredients:

Bread loaf
Mozzarella
Capsicum
Tomato
Pizza spread
Onions

Method: Take bread slices and remove the hard edges. Glaze them with a pizza spread sauce of your choice. Spread chopped onions and capsicum. Add diced tomatoes. Garnish with coriander. Grate mozzarella on the bread slices. Bake these slices for 10 minutes at 120˚.

Ingredients:

Potatoes
Gram flour
Coriander
Salt
Turmeric Powder
Red Chilli Powder

Method: Cut potato sticks. In a bowl make a paste of gram flour, salt, turmeric powder, red chilli powder and coriander leaves. Dip the sticks and fry them and serve with a mint dip.

Ingredients:

Chicken (boneless)

Turmeric
Curd
Vinegar
Soya sauce
Tomato puree
Red chilli powder
Clove, cumin, bay leaf, cinnamon, pepper powder- garam masala

Method: Marinate the chicken with curd and spices mentioned above. Keep in the refrigerator for about 45 minutes. In a pan heat oil, add one table spoon vinegar, tomato puree and soya sauce. Add the marinated chicken to the puree and fry well. Add more vinegar to fry it better.

Dahi Bhalle

Ingredients:

Udat Dal
Tamarind chutney
Green chill – Mint – Coriander chutney
Curd
Chat masala

Method: Soak the pulses overnight and then made a paste in the morning. Make balls of this and fry them. In a bowl mix some sugar and water and dip the balls in the syrup. Now after some timetake the balls out of the syrup and add curd, tamarind chutney, green chilli – mint- coriander chutney over them. Also add some chat masala.

Ingredients:

Rice
Salt and vegetables of choice

Method: Soak rice in water overnight and make a paste. Heat a pan and glaze with oil. Spread the rice paste. Add chopped vegetables and fry the Uttapam. Turn it upside down to fry the other side.

Method: Make a paste of gram flour, salt, turmeric and put the paste in Tart mould. Bake the Tarts at 350˚ C for about 20 minutes. Take out the Tarts and fill them with chopped

onions and tomatoes. Add cucumber cubes, boondi, sev and the chutney.

Ingredients:

Corn cobs
Onion

Bread
Boiled Potatoes

Method: In a bowl take boiled potatoes, corn, onion cubes, salt and make a nice filling. Take bread and dip it in water, add filling and make Rolls. Deep fry the rolls.

Method: Take Puri and fill them with curd. Add tamarind chutney and sev and serve. Sprinkle some chilli red powder.

Choco chips
Condensed milk
Caramelized sugar
Cardamom powder

Method: In a bowl mix condensed milk, cardamom powder and eggs. In a pan caramelize some sugar. Pour the mix you have made. In a steaming vessel place this pudding mixture in a mould. In a class add some choco chips and put a pudding slice add some crumbled Oreo biscuit and some whipped crème.

Vanilla essence
Eggs/condensed milk
Saturated fat oil

Method: Take equal amounts (according to weight) of  fine flour, sugar, eggs, saturated fat oil. Beat the mix. Preheat the oven at 350˚ and bake for 25-30minutes.
