Kachumber is a word in Urdu, used primarily in everyday conversation and means, basically a bash of something. This dish is a salad. To prepare, in a bowl toss in together 4-5 chopped tomatoes, chopped onions, cumin, and cayenne, juice of half a lemon, coriander leaves, mint, and chilies. Serve it as a complete meal or use as a side dish.

Harissa is a hot chili pepper paste from North Africa. In a pan toss tomatoes with harissa, cut-side-up and then bake. In a bowl mix yogurt, garlic, and tahini (this is the sauce). Mix the couscous with herbs, top with tomatoes and yogurt sauce.

6. Tomato and Melon Salad

A healthy salad with tomato and melon together. To make the dish, first, take 2-3 cucumber; peel, chop. Take melons, deseed, then chop and keep aside as well. Lastly, chop the tomatoes. 7. Crunchy Baked Tomatoes

In a pan sauté chopped onions and garlic but don’t let them get brown. Take a bunch of mixed size of tomatoes from small to big, keep the smaller ones as it is but half, the larger ones. To these tomatoes add thyme, golden caster sugar, onion-garlic mix, and breadcrumbs. Toss everything together and bake. When the top is golden brown and tomatoes are tender, serve hot.

8. Spanish Tomato Salad

To make the salad look presentable, take different colored and sized tomatoes. Take a red onion and slice into thin pieces and put on a platter along with the sliced tomatoes and sprinkle salt and sugar. Prepare a dressing of vinegar, olive oil, parsley, garlic, and almonds in a food processor. Alternate the tomato and onion slices with ham and put the dressing over it along with cheese. Serve.

9. Ricotta Dip with Crushed Tomatoes

To prepare this dip, in a bowl take cream and ricotta cheese, chives, mint, and salt, mash them together and chill. In a different bowl take roughly chopped tomatoes and try to retain all the juices, and then sieve the juice and discard. To it add olive oil, sugar, salt, and vinegar.

11. Tomato Fish Curry
