1 Omelet Pancakes with Tomato
Give a twist to your regular pancakes. Firstly, prepare the tomato based sauce. In a pan sauté garlic and pepper. Sizzle apple cider vinegar and cook the tomatoes. For the pancakes, beat eggs with water and prepare pancakes. Serve with toast and spoon the sauce onto the pancakes.
2 Halloumi with Tomato and Pomegranate
Try this recipe of tomatoes with middle-eastern za’atar and Halloumi cheese. In a pan sauté za’atar and fry the Halloumi. In the pan put sliced cherry tomatoes and cook until done. Pour and top with pomegranate molasses and garnish with pomegranate seeds.
3 Tomato Kachumber
Kachumber is a word in Urdu, used primarily in everyday conversation and means, basically a bash of something. This dish is a salad. To prepare, in a bowl toss in together 4-5 chopped tomatoes, chopped onions, cumin, and cayenne, juice of half a lemon, coriander leaves, mint, and chilies. Serve it as a complete meal or use as a side dish.
4 Harissa Roasted Tomatoes with Couscous
Harissa is a hot chili pepper paste from North Africa. In a pan toss tomatoes with harissa, cut-side-up and then bake. In a bowl mix yogurt, garlic, and tahini (this is the sauce). Mix the couscous with herbs, top with tomatoes and yogurt sauce.
5 Spaghetti with Tomato Sauce
Savor this spaghetti dish with a tangy sauce of tomatoes. Crush together shallots, lemon zest, oil, chilies, tomatoes, sugar, and vinegar. Cook the spaghetti separately. Combine the cooked noodles with the tomato mix and top with mozzarella. Garnish with mint and serve.
6 Tomato and Melon Salad
A healthy salad with tomato and melon together. To make the dish, first, take 2-3 cucumber; peel, chop. Take melons, deseed, then chop and keep aside as well. Lastly, chop the tomatoes. Mix oil and chopped mint and mix with the chopped vegetables. Garnish with chopped coriander and any cheese, serve chilled.
7 Crunchy Baked Tomatoes
In a pan sauté chopped onions and garlic but don’t let them get brown. Take a bunch of mixed size of tomatoes from small to big, keep the smaller ones as it is but half, the larger ones. To these tomatoes add thyme, golden caster sugar, onion-garlic mix, and breadcrumbs. Toss everything together and bake. When the top is golden brown and tomatoes are tender, serve hot.
8 Spanish Tomato Salad
To make the salad look presentable, take different colored and sized tomatoes. Take a red onion and slice into thin pieces and put on a platter along with the sliced tomatoes and sprinkle salt and sugar. Prepare a dressing of vinegar, olive oil, parsley, garlic, and almonds in a food processor. Alternate the tomato and onion slices with ham and put the dressing over it along with cheese. Serve.
9 Ricotta Dip with Crushed Tomatoes
To prepare this dip, in a bowl take cream and ricotta cheese, chives, mint, and salt, mash them together and chill. In a different bowl take roughly chopped tomatoes and try to retain all the juices, and then sieve the juice and discard. To it add olive oil, sugar, salt, and vinegar.

11 Tomato Fish Curry
In this recipe, fish is cooked in a tomato based curry. Crush together chili, garlic, ginger, coriander and turmeric and make a paste. In a pan splutter cumin and fennel then add the crushed spices. Put tomatoes and water into the pan, bring to boil and then add tamarind pulp. Fry the fish fillets with a seasoning of salt and pepper then add to the simmering curry. Cook until the sauce thickens.

To make the soup, in a pan sizzle garlic butter, put chopped carrots and onions and cook. Put the tomatoes and oregano and cook.Now add cream. Bring the soup to desired consistency. Serve with garlic bread or bread sticks.
13 Tomato and Anchovy Risotto
To prepare this the anchovy fillets first preserve them in oil,and use that oil for cooking. Take the oil in a pan, add onions and the fillet. Now add garlic and the rice, stock, and then the tomatoes. Serve risotto in bowls with bread crumbs fried in anchovy oil.
14 Tomato and Crispy Crumb Chicken
To make these take chicken breasts and half them but not completely. Prepare a sauce out of chopped tomatoes, garlic, vinegar, and tomato puree. Crush bread crumbs and herbs together. A tomato based sauce is the base of this dish. To bake the fish, put the fish in a baking dish, pour wine and water, then add onion and peppercorn and bake. Remove from the liquid and cool. For the sauce, in a pan sauté onions and garlic, put tomatoes, basil, bay leaves, thyme and spices, cook, puree, and strain. Whisk up a dressing of oil, vinegar, mustard, salt, and pepper. Mix with the dressing with sauce, pour over the baked fillets and serve.

In a bowl combine, chopped green tomatoes, shallots, salt, spices chickpea and rice flour. Combine everything together and make patties. Fry until golden brown and serve with mint chutney.
20 Tomato Pie
Cut the tomatoes into wedges and line on a baking sheet. Put a layer of chopped onions, salt, basil, and pepper. Make a combination of mayonnaise, cheddar, and parmesan and spread over the onion layer, continue with alternate layers starting with tomatoes, till the mayo mix. Bake. Serve warm.
