Eggs are an integral part of most cuisines or cultures in India. Egg Masala refers to a simple dish, which can be consumed with both Rice and Roti. Usually, the Eggs are first boiled, fried and then kept aside. Then, Onions, Garlic, Tomatoes, Ginger, Bell Peppers are sauteed in tempered Oil along with Spices like Cumin, Coriander, Cardamom, etc. The mixture is then made into a Curry where the Eggs are added. You can add Coriander Leaves, Chillies and Garam Masala Powder to garnish, once it is done.
