Procedure

Take a bowl and add green gram, black gram, and Bengal gram. Add some water and soak them for one hour. Now, add some turmeric powder and salt. Bring them to boil. Also mash the ingredients well. On the other hand, take a pan and add oil. Heat the oil. Now create a flavor by adding dry red chilies, red chili powder, bay leaves, cumin seeds, asafoetida, cloves, cardamom, curry leaves, cinnamon, ginger, green chilies, and, tomatoes. Cook all the ingredients well. Pour the seeds into the other ingredients and cook for five minutes. Squeeze the lemon and add some chopped coriander leaves. It will overall enhance the flavor. Now, the next step is to make batis. Take some wheat flour and add salt to it. Also, add baking powder and ghee to it. Add some water and knead it to form the dough. Heat it in the oven. Procedure

Take a cup of yogurt. Add dried beans and berries to it. Soak them overnight. Then take out the beans and berries and wash them with fresh water. Take a bowl and add them to it. Pour some water along with a pinch of salt. Boil the beans and berries for twenty minutes. On the other hand, take a pan and pour oil into it. Heat it with red chilies. Then, prepare it using yogurt. Add masalas and some yogurt. Mix all the ingredients well. Add sangri and ker. Also, put the masalas like aamchur powder and chopped coriander leaves. Mix them and then, dress it with chopped garlic. Procedure

Take a grinder and add cumin seeds, coriander seeds, and red chili powder. Make a powdered mixture. Now, take a pressure cooker and pour ghee. Allow it to heat for some time. Now add green and black cardamom along with cinnamon and cook it till you could smell the fragrance. Also, add bay leaves and chopped onions to the pressure cooker. Add garlic cloves and spices to enhance the flavor. For dry mix, take the mutton pieces along with salt, ginger-garlic paste, and red chili paste. Mix it well. Then pour some yogurt to the mixture. Now add those pieces into the pressure cooker and allow it to heat for five minutes. You can add some water and for quick cooking, cover the pressure cooker with its lid. Wait for five whistles. Now you can serve your Laal Maas.

Procedure

Take a blender and add yogurt to it. Blend it until smooth. If the yogurt is thick, you can also add milk, accordingly. Add roasted cumin powder and red chili powder. Chop the coriander leaves and mix it with yogurt. At last, put boondi and mix the yogurt. Your Boondo Raita is ready. You can also sprinkle some cumin powder while serving.

5.Methi Bajra Paranthas

Ingredients

  • Chopped Fenugreek Leaves
  • Millet Flour

Procedure

Take a bowl and add millet and wheat flour. Mix it dry. Now, add chopped fenugreek leaves, garlic and green chili paste, yogurt, sesame seeds, grated jaggery and salt according to taste. Pour some water that would help in easy mixing. Knead all the ingredients to form the dough. You can also add a spoon of oil. Now take some dough and roll it to form spheres. The first step is to take a bowl with some raw mangoes and peel them. Then, cut it into large pieces. Now, take a pan and pour some oil. Add all the ingredients including, fenugreek, fennel, and onion seeds, followed by grated jaggery, red chili powder, and turmeric powder. Heat it for some time and then add the mango pieces to it. 9.Churma Ladoo

Ingredients

  • Coarse Whole Wheat Flour

  • Nutmeg Powder
  • Green Cardamom Powder

Take a bowl and add the flour to it. Pour some oil and knead it to form the dough. Now take some of it and roll it in the shape of ladoo. At the same time, take a pan and pour some oil. Heat it and add the ladoo. Deep fry it, until it changes its color. Now, keep it on an absorbent paper to remove the extra oil. Now, powder it again and allow it to pass through a sieve. Take a bowl and mix millet flour with whole wheat flour. Add chopped onions and green chilies, followed by grated carrot and carom seeds. Pour some water and mix it well. Take a bowl and put some chana dal. Pour water into it and soak the dal overnight. Now, remove the extra water and grind the dal. Then mix grated mawa and cottage cheese with green chilies and salt. Now take some dough and stuff it with grated mawa and cottage cheese. Roll it to form a cylinder. Deep fry the cylinders and keep them aside. Now, time to make the gravy. Take a pan and pour some oil with cumin seeds. Heat it well and wait till it turns brown. Now, add red chili powder, coriander powder, turmeric powder and asafoetida, followed by tomato paste. Also, add some yogurt, and stir the mixture. Add some salt and garam masala powder according to taste. Now put the gatte inside the gravy and mix well. Make sure that it is not very thick. If so, add some water to it.   • Sliced Onion
  • Green Chilies

Procedure

Add some gram flour to a bowl. Add yogurt, salt, ginger, and soda bicarbonate to it. Pour some water and then knead the mixture to form the dough. Then mix grated mawa and cottage cheese with green chilies and salt. Now take some dough and stuff it with grated mawa and cottage cheese. Roll it to form a cylinder. Deep fry the cylinders and keep them aside.

Now, for the flavour, put sliced onions, green chilies, ginger, and garlic in a bowl and grind it. Keep it aside for some time.

For rice, take a bowl and add water. Allow it to boil. Now, add rice to it. Allow it to boil again and then leave it on medium flame. Then remove the excess water from the rice. Now, in a pan cook the sliced onion. Heat it with oil until it changes its color. Then, take another vessel and pour some oil. Add cardamom, cloves, mustard seeds, cumin seeds, and asafetida. Then, add the paste to it and allow it to cook for three minutes. Add all the spices and mix well. Now, put rice and gattas into it and cook it for some time. Stir all the ingredients and make sure the pulao is free of lumps. At last, add chopped cilantro and serve.

15.Rajasthani Kadhi

Ingredients-

Ingredients

  • Coriander Seeds

Procedure

Take a pan with a few spoons of oil. Heat the oil. Add cumin seeds along with asafoetida. When the ingredients turn brown, add coriander seeds and heat it again. Now, add some chopped onions and cook until it turns reddish brown. After that, add chopped ginger, garlic and green chilies followed by red chili powder. Cook it well. Allow it to cool for some time. Then, take a bowl with refined flour in it. Put salt and oil. Also, pour some water and knead it well to form the dough. Cover it with a wet cloth. Now, take some dough and form a roll out of it. Fill the roll with onion mixture and chopped coriander leaves. Now, flatten it with soft hands.In the end, take a pan and heat some oil. Put the kachori into the oil and allow it to deep fry until it turns golden. Now, serve the Onion Kachori with chutney.

17.Badaam Ka Halwa

Ingredients

  • Almonds
  • Ghee
  • Milk
  • Whole Wheat Flour
  • Sugar
  • Saffron Strand
  • Cardamom Powder
  • Silvered Almonds

Procedure

Take a bowl and soak a handful of almonds in water. After sometime de-skin the almonds. Blend the almonds using milk. Now, Take a non-stick pan and heat some ghee in it. Now, add the almond mixture and stir. Side by side, mix milk and water and allow it to boil. Now, add whole wheat whole to the mixture and stir. Then, pour the water-milk mix into it. Cook it for five minutes. Add saffron strands and continue stirring. Turn off the flame and add some cardamom powder. At last, garnish it with chopped silvered almonds and serve.

Procedure

Mix all the ingredients in a grinder. Grind it well to form a paste out of it. Take a pan with some sppons of oil in it. Now, heat the oil, and pour the paste it in. Cook it for some time and serve. It tastes best when served cold.
