1.Daal Baati

Procedure
Take a bowl and add green gram, black gram, and Bengal gram. Add some water and soak them for one hour. Now, add some turmeric powder and salt. Bring them to boil. Also mash the ingredients well. On the other hand, take a pan and add oil. Heat the oil. Now create a flavor by adding dry red chilies, red chili powder, bay leaves, cumin seeds, asafoetida, cloves, cardamom, curry leaves, cinnamon, ginger, green chilies, and, tomatoes. Cook all the ingredients well. Pour the seeds into the other ingredients and cook for five minutes. Squeeze the lemon and add some chopped coriander leaves. It will overall enhance the flavor. Now, the next step is to make batis. Take some wheat flour and add salt to it. Also, add baking powder and ghee to it. Add some water and knead it to form the dough. Heat it in the oven. Take some dough and roll it. Put the rolls on a baking tray. Cook the rolls again. It will take around twenty minutes. Soak it into the dal and add some ghee to it. The daal baati churma is ready to serve.
2.Ker Sangri
Ingredients

Procedure
Take a cup of yogurt. Add dried beans and berries to it. Soak them overnight. Then take out the beans and berries and wash them with fresh water. Take a bowl and add them to it. Pour some water along with a pinch of salt. Boil the beans and berries for twenty minutes. On the other hand, take a pan and pour oil into it. Heat it with red chilies. Then, prepare it using yogurt. Add masalas and some yogurt. Mix all the ingredients well. Add sangri and ker. Also, put the masalas like aamchur powder and chopped coriander leaves. Mix them and then, dress it with chopped garlic. Serve your Ker Sangri.
3.Laal Maas

Procedure
Take a grinder and add cumin seeds, coriander seeds, and red chili powder. Make a powdered mixture. Now, take a pressure cooker and pour ghee. Allow it to heat for some time. Now add green and black cardamom along with cinnamon and cook it till you could smell the fragrance. Also, add bay leaves and chopped onions to the pressure cooker. Add garlic cloves and spices to enhance the flavor. For dry mix, take the mutton pieces along with salt, ginger-garlic paste, and red chili paste. Mix it well. Then pour some yogurt to the mixture. Now add those pieces into the pressure cooker and allow it to heat for five minutes. You can add some water and for quick cooking, cover the pressure cooker with its lid. Wait for five whistles. Now you can serve your Laal Maas.
Boond4.i Raita
Ingredients

Procedure
Take a blender and add yogurt to it. Blend it until smooth. If the yogurt is thick, you can also add milk, accordingly. Add roasted cumin powder and red chili powder. Chop the coriander leaves and mix it with yogurt. At last, put boondi and mix the yogurt. Your Boondo Raita is ready. You can also sprinkle some cumin powder while serving.
5.Methi Bajra Paranthas
Ingredients

- Sesame Seeds
- Grated Jaggery
- Salt
- Oil
Procedure
Take a bowl and add millet and wheat flour. Mix it dry. Now, add chopped fenugreek leaves, garlic and green chili paste, yogurt, sesame seeds, grated jaggery and salt according to taste. Pour some water that would help in easy mixing. Knead all the ingredients to form the dough. You can also add a spoon of oil. Now take some dough and roll it to form spheres. Flatten it to form paratha. Side by side, take a pan and heat it. Now, put the parantha over the pan and allow it to cook for some time. Wait until it turns reddish brown and then, serve.
6.Aam Ki Launji
Ingredients

Procedure
The first step is to take a bowl with some raw mangoes and peel them. Then, cut it into large pieces. Now, take a pan and pour some oil. Add all the ingredients including, fenugreek, fennel, and onion seeds, followed by grated jaggery, red chili powder, and turmeric powder. Heat it for some time and then add the mango pieces to it. Pour the launji into glass jars. Bring down its temperature and serve accordingly.
7.Dil Khushal
Ingredients

Procedure
Take a non-stick pan and pour ghee. Heat the ghee and then add gram flour. Heat it while stirring it continuously. You need to cook it until it changes its color. Then add green cardamom powder, followed by silvered almonds and pistachios. Mix all the ingredients well. Then add powdered sugar, and cook it for some more time. At last, take a rectangular tray and grease it with ghee. Pour the mixture and allow it to cool down. Then, as soon as it hardens, cut it into pieces and serve.
8.Missi Roti

Procedure
Take a bowl and mix gram and wheat flour. Add all the ingredients and mix well. Pour some water and a spoon of oil and knead it to form the dough. Now, on the other hand, take a pan and heat it. Take some of the dough. Now, roll it to form the spheres. Flatten it in the form of roti. Now, place the roti over the pan and cook it for some time. Make sure you cook both the surfaces. Your roti is ready to serve.
9.Churma Ladoo

- Poppy Seeds
Procedure
Take a bowl and add the flour to it. Pour some oil and knead it to form the dough. Now take some of it and roll it in the shape of ladoo. At the same time, take a pan and pour some oil. Heat it and add the ladoo. Deep fry it, until it changes its color. Now, keep it on an absorbent paper to remove the extra oil. Now, powder it again and allow it to pass through a sieve. Grind the powder completely. Now, heat the jaggery using a non-stick pan with some ghee until it melts. Now, it’s time to remove it from the flame and add the powder to it. Mix it well with powdered sugar. Now, add nutmeg powder and green cardamom powder and mix all the ingredients well. Now, shape it again to form the ladoo. For dressing the ladoo, roll it over the poppy seeds and serve.
10.Bajra Roti
Ingredients-

Procedure
Take a bowl and mix millet flour with whole wheat flour. Add chopped onions and green chilies, followed by grated carrot and carom seeds. Pour some water and mix it well. Knead the mixture to form the dough. Now, take some dough and roll it to form a sphere. Now, flatten it into a form of roti. Take a pan and heat it. Place the roti over the pan and allow it to cook for some time. Make sure you cook it from both the side. Serve your bajra roti. It’s healthy and is served with many vegetables.
11.Kalmi Vada
Ingredients

Procedure
Take a bowl and put some chana dal. Pour water into it and soak the dal overnight. Now, remove the extra water and grind the dal. Now, add chopped green chilies, chopped coriander, salt, ginger, asafoetida, red chili powder, and coriander powder. Mix it well. Then, take a pan, pour some oil and allow heating it. At the same time roll the mixture to form a vada and put it in oil. Deep fry it, until it turns brown. Now, take the vada and cut it into pieces. Sprinkle some chat masala over it and serve.
12.Shahi Gatte

Procedure
Add some gram flour to a bowl. Add yogurt, salt, ginger, and soda bicarbonate to it. Pour some water and then knead the mixture to form the dough. Then mix grated mawa and cottage cheese with green chilies and salt. Now take some dough and stuff it with grated mawa and cottage cheese. Roll it to form a cylinder. Deep fry the cylinders and keep them aside. Now, time to make the gravy. Take a pan and pour some oil with cumin seeds. Heat it well and wait till it turns brown. Now, add red chili powder, coriander powder, turmeric powder and asafoetida, followed by tomato paste. Also, add some yogurt, and stir the mixture. Add some salt and garam masala powder according to taste. Now put the gatte inside the gravy and mix well. Make sure that it is not very thick. If so, add some water to it. Now, you can serve the dish.
13.Jowar Roti

Procedure
Take a bowl and add millet flour, bhuna masala, and salt and chopped green chilies. Now pour some hot water into it. Mix it well. Knead the ingredients to form the dough. Now, take a plastic sheet and apply some oil over the surface. Take some of it and put it on the sheet. Roll it well in the shape of a roti. Now, cook the roti using a pan until it turns reddish brown. Apply some oil on its surface and serve.
14.Gatte Ka Pulao

Procedure
Add some gram flour to a bowl. Add yogurt, salt, ginger, and soda bicarbonate to it. Pour some water and then knead the mixture to form the dough. Then mix grated mawa and cottage cheese with green chilies and salt. Now take some dough and stuff it with grated mawa and cottage cheese. Roll it to form a cylinder. Deep fry the cylinders and keep them aside.
Now, for the flavour, put sliced onions, green chilies, ginger, and garlic in a bowl and grind it. Keep it aside for some time.
For rice, take a bowl and add water. Allow it to boil. Now, add rice to it. Allow it to boil again and then leave it on medium flame. Then remove the excess water from the rice. Now, in a pan cook the sliced onion. Heat it with oil until it changes its color. Then, take another vessel and pour some oil. Add cardamom, cloves, mustard seeds, cumin seeds, and asafetida. Then, add the paste to it and allow it to cook for three minutes. Add all the spices and mix well. Now, put rice and gattas into it and cook it for some time. Stir all the ingredients and make sure the pulao is free of lumps. At last, add chopped cilantro and serve.
15.Rajasthani Kadhi
Ingredients-

Procedure
Take a pan and pour yogurt into it. Add gram flour, turmeric powder, and salt to it. Cook it for some time. Make sure the mixture is without any lumps. On the other hand, take a small pan and heat some oil. Add mustard seeds and bay leaves. The, add cumin seeds, fenugreek seeds, red chili powder and asafoetida. Stir all the ingredients well and switch off the flame. At last, pour the yogurt mixture into it and stir well. Cover the kadi and cook on a low flame for two minutes. Your Rajasthani Kadi is ready to serve.
16.Pyaaz Kachori

Take a pan with a few spoons of oil. Heat the oil. Add cumin seeds along with asafoetida. When the ingredients turn brown, add coriander seeds and heat it again. Now, add some chopped onions and cook until it turns reddish brown. After that, add chopped ginger, garlic and green chilies followed by red chili powder. Cook it well. Allow it to cool for some time. Then, take a bowl with refined flour in it. Put salt and oil. Also, pour some water and knead it well to form the dough. Cover it with a wet cloth. Now, take some dough and form a roll out of it. Fill the roll with onion mixture and chopped coriander leaves. Now, flatten it with soft hands.In the end, take a pan and heat some oil. Put the kachori into the oil and allow it to deep fry until it turns golden. Now, serve the Onion Kachori with chutney.
17.Badaam Ka Halwa

Procedure
Take a bowl and soak a handful of almonds in water. After sometime de-skin the almonds. Blend the almonds using milk. Now, Take a non-stick pan and heat some ghee in it. Now, add the almond mixture and stir. Side by side, mix milk and water and allow it to boil. Now, add whole wheat whole to the mixture and stir. Then, pour the water-milk mix into it. Cook it for five minutes. Add saffron strands and continue stirring. Turn off the flame and add some cardamom powder. At last, garnish it with chopped silvered almonds and serve.
18.Churma

Take a bowl and add flour and semolina to it. Then above it, pour ghee and milk, as per requirement and knead it to form the dough. Now, divide the dough into equal spheres and deep fry it in a pan. Now, place it on absorbent paper. Grind it well. Into the mixture, add powdered sugar and cardamom powder, followed by chopped cashew nuts, almonds and resins. Your Churma is ready to serve.
19.Lahsun Ki Laal Chutney

Procedure
Mix all the ingredients in a grinder. Grind it well to form a paste out of it. Take a pan with some sppons of oil in it. Now, heat the oil, and pour the paste it in. Cook it for some time and serve. It tastes best when served cold.
20.Kachri Ki Chutney

Now above it add rest of the ingredients, including kachri, turmeric powder, red chili powder, aniseed, yogurt, and red chili. Mix it well. Allow it to cook. Then store it in a container and allow it to lower its temperature and serve.
