Indian Mix

Ingredients:

  • Flattened Rice
  • Puffed Rice
  • Salt
  • Chili  Powder
  • Lemon
  • Onions
  • Coriander
  • Ground nuts for taste

Preparation:

Firstly, to the Puffed and Flattened rice, we start adding the remaining ingredients in sufficient quantities and mix them all thoroughly and serve it good with some coriander and groundnuts.

Serving suggestions: Add some groundnuts and lemon.

Uttapam

Uttapam  is a traditional Indian style food while has a deliciously mingled touch.

Ingredients  :

  • Dosa batter
  • Capsicum
  • Green chilies
  • Salt
  • Spices mix powder
  • Tomatoes
  • Onions
  • Coriander
  • Green Chutney to serve good.

Serving suggestions : Have it with some extra coriander and onions which adds better taste.
Procedure   :

  1. Initially, heat the pan for medium flame and add sufficient quantity of batter. Add some oil to it and leave it on a slow flame.
  2. After cooked for a while, and the ingredients tomato, onions, salt, slight touch of ginger, capsicums, green chilies to your taste.
  3. Finally, chop some coriander and some green chutney would really add it a great taste to serve hot.

Bamboo Chicken

Bamboo Chicken is a very famous dish majorly prepared in the areas of Araku Valley…..and some other places like East Godavari..Many tourists like to have it at least once during their visit and moreover, the local people have a great crush on it and like it.

Ingredients:

  • Chicken skinless – 500 grams
  • Salt.
  • Red chili powder.
  • Chopped onions -2 tsp
  • Chopped chilies- 1 tsp
  • Chicken mix powder-1 tsp
  • Turmeric powder
  • Ginger Garlic Paste -1tsp.
  • Spices mix  Powder-1tsp.
  • Oil- 2 tsp

Preparation :

  1. Mix all the above ingredients together.
  2. The chicken is cleaned and stuffed in the bamboo.
  3. When the chicken stuffing is completed,it it cooked well for 20 minutes and then taken off.
  4. After prepared, serve it hot with lime and onions.

Serving suggestions : Have it with some lime juice and onions.

4.

Punug Sambar

This food  mainly attracts the people who like to have a hot serve in evenings.
Ingredients:

  • Sambar  readily prepared
  • Dosa Batter
  • Rice flour 1 cup
  • Onions, finely chopped
  • Green chilies, finely chopped
  • Cumin seeds
  • Salt –as required
  • Enough quantity of oil

Procedure :

  1. Add rice flour, semolina, onions, green chilies, cumin seeds and curry leaves to the batter, mix it really well and keep it for further use.
  2. Heat the  oil and take a spoon of batter, and drop it in the hot oil slowly one after another.
  3. Drop the batter in the form of small balls into the oil.
  4. Fry them and remove them aside on tissue paper to remove the excess oil.
  5. Now dip the fried balls in the Sambar and is ready to serve.

Egg Chapati

Really a fan of chapatis ???  This recipe of Egg Chapatti adds egg with the mixed ingredients too…!!

This recipe is mainly a street food of Kolkata but has the good approach as the best street food from many people.
Ingredients :

  • Onions
  • Eggs  – as needed
  • Lemon juice
  • Chat powder
  • Tomato ketchup
  • Black pepper powder
  • Turmeric powder
  • Oil
  • Salt

Preparation :

  1. Firstly, break the eggs, and add black pepper powder, salt, turmeric powder and beat well.
  2. Heat the pan and add half of the egg mixture.
  3. Gently swirl the pan, so that it spreads to the size of the chapatti.
  4. When the egg cooks for some time, gently place the prepared chapatti on it and press it to the egg using spatula.
  5. Now add the other tomatoes, a bit of chat powder and serve it with ketchup.

Tomato Bajji

The nice touch of tomatoes with the spicy ingredients added to it gives a perfect combination to have it on a hungry eve. This recipe has much demand and attracts people who really likes street food with much -decorated ingredients.

Ingredients :

  • Fresh red tomatoes, Onions
  • Basin flour.
  • Raw corn flakes: 70-80 grams
  • Coriander
  • Ground nuts
  • Red chili powder: 1 spoon
  • Ginger Refined oil
  • Tasting salt
  • Salt
  • Garam masala to taste

Preparation:

  1. Firstly, prepare a pan with sufficient oil so that the tomatoes dipped in the batter immerses into it completely.
  2. Leave the oil to heat.
  3. Add some water to flour and mix it without forming any lumps.
  4. After the corn flakes are fried, take a bowl, cut the tomato ball to half and remove the whole tomato from the basin layer and put into the bowl.
  5. Add salt, red chili powder, chopped coriander,  spice masala, corn flakes, ground nuts, chopped onions into the bowl and a pinch of chat masala for your taste if needed for taste.
  6. After completing the above ingredients mixing, add sufficient salt, some coriander, groundnuts for best taste.
  7. Place the tomatoes on the plate and spread the above-prepared mixture gently on the tomatoes.
  8. Lastly, add some finely chopped ginger to add some flavor to it.

Samosa

Ingredients :

For Cover:

  • 1 cup Maida

Water as required to mix
5 tbsp oil salt

For Stuffing:

  • Potatoes – which are boiled and kept aside
  • 1 cup of Green Peas boiled
  • Green Chilies finely chopped
  • Salt, Garam Masala
  • Onions finely chopped

Preparation :

  1. Mix all the ingredients one by one.
  2. Add a little water at a time.
  3. Knead well to get a smooth finish.
  4. Cover it and keep aside for 15 minutes.

For Stuffing :

  1. Initially, take the boiled and mashed potatoes and to it, add turmeric powder, salt, green chili paste, chat powder as required based on your taste.
  2. Add boiled green peas, coriander, and mix well.
  3. Then prepare the Samosa shapes to fill the above stuffing.

To make the samosa  :

  1. Make small rolls of all purpose flour which is previously kneaded with some water and roll it.
  2. Take some part of it, and then make it into a semi-circle.
  3. Now, make it into a cone shape and fill the potato stuffing.
  4. Heat oil and deep fry till they turn out into light brown color.
  5. Serve Samosa hot with the chutney or green chillies marinated in salt and lemon.

8.

Aapalu

This  a famous South Indian recipe and is prepared with much ease and takes less time to complete it.

Ingredients :

  • Dosa batter
  • Salt as required

Preparation:

  1. Take a tawa and heat it to medium heat and place the dosa batter on it and add some oil.
  2. After it turns to golden brown, take it off and serve with green chutney.

Vada

Ingredients:

  • Chana Dahl
  • Mint
  • Green chilies
  • Onions
  • Curry leaves
  • Oil sufficient for deep frying
  • Salt, Ginger, and garlic

Preparation :

  1. Soak the Chana Dahl for overnight and then drain the excess water in it. Now have a coarse chop off that Dahl.
  2. Add the curry leaves, onions, salt, cumin, mint, ginger, garlic and mix thoroughly, add required amount of water and salt to it.
  3. Heat the oil in the Kadai and make it as Vada and fry in the oil.
  4. Take it off, strain the excess oil and serve it with ketchup or chili chutney.

10.

Noodles

Almost everyone likes to have. This is basically a Chinese dish. A cool evening always attracts many of the people towards this street food…

Ingredients:

  • Chinese or Hakka noodles
  • Ginger and Garlic finely chopped
  • 2 stalks green  onions (cut into 1-inch strips)
  • 5 tablespoons oil
  • Tomato  sauce as per your taste
  • 4 tablespoon oil

Directions :

  1. Firstly, take a pan with some water and bring it to medium heat, and put the Noodles in it and boil it for 2-3 minutes.
  2. Now drain the excess water if any, present in them.
  3. Heat oil in a pan over a slow flame.
  4. Add ginger and onion stir for some more time.
  5. Add Noodles and fry on over medium heat.
  6. Add sauce, and stir until mixed well.
  7. Serve hot

Serving suggestions: Add some finely chopped cabbage, onions.Serve it hot with tomato sauce or Chili sauce.

Vangi Bajji

This is an Andhra food which can be prepared at any time and is an awesome appetizer at any time.

Ingredients:

  • Brinjals  Big-3
  • Gram Flour-1 cup
  • Rice flour-4 spoons
  • Salt
  • Red chili powder as per your taste
  • Cooking Soda-1 spoon
  • Oil-For Deep fry.

Directions:

  1. Add 1 Cup gram flour and rice flour, salt, red chili powder, and cooking soda together.
  2. Mix all gram flour with 3 tablespoons of rice flour to get a crispy taste. Add coriander leaves and add a little water and make a smooth batter.
  3. After the oil heats up, take the Brinjals and dip them into the gram flour batter and put it into the hot oil and fry them.
  4. When they turn to brown, take it off and garnish with some onions and have it.

12.

Pakoda

Ingredients:

  • Gram flour-2 cups
  • Water
  • Salt as required
  • Baking soda- a pinch
  • Chili powder
  • Oil for deep fry
  • Onions 2 medium sized

Preparation :

  1. Get the onions, and cut them in very small long pieces.
  2. Mix all the ingredients  except salt.
  3. Meanwhile, prepare the gram flour batter added with some baking soda.
  4. Now add the salt and mix it well.
  5. Take care so that no lumps are formed.
  6. Take a pan with sufficient oil in it for deep frying the Bajjis.
  7. Drop them in the frying pan by dipping into the batter.
  8. Fry them until they turn light brown, turning them occasionally.
  9. Serve hot with chutney or sauce
Pakoda

Vada Pav

This is a good serve for those who likes it fill their hunger with  a short bite. Most of the areas in Mumbai are well known for this street food.

Ingredients:

For the vada :

  • 3 cups of oil
  • Potatoes 4
  • curry leaves
  • Pinch of  mustard seed
  • A pinch of hinge.
  • Turmeric powder a pinch
  • coriander
  • green chilies
  • chat mix powder a pinch
  • coriander  powder
  • spice  mix powder
  • salt as per taste

For the batter:

  • 3 cups of gram flour
  • water  as required
  • turmeric powder – a pinch
  • A pinch of cooking soda
  • chili powder
  • salt as needed

Procedure:

Preparing the filling:

  1. Firstly boil the potatoes until cooked. Peel and mash them finely.
  2. Now add the curry leaves, mustard seed, cumin seed, and a pinch of hinge.
  3. Add this resulted mixture to the mashed potatoes.
  4. Chilies, garlic and ginger paste, garam masala powder and salt are added to it.
  5. Combine all the ingredients uniformly. Make medium sized balls and then make the
  6. required shape by pressing it gently.
  7. Place it aside.

Making the vadas:

  1. Take required amount of gram flour and make it into a batter by adding water and stirring occasionally. The batter should be fine enough to mix them with it.
  2. Place a pan with some oil in it for frying.
  3. Dip the Vada in the batter and fry them.
  4. Put a pan with oil and heat it up to medium flame and then dip the potato mix in the batter and start frying it.
  5. Slit the bread from the middle. Spread the green chutney in between the bread.
  6. Also, put some chilies marinated in lemon and salt which tastes awesome to serve. Top some chopped onions.

Bread Omelet

Ingredients :

  • Bread  slices
  • Eggs – 3
  • Salt to taste
  • Pepper a pinch
  • Cheese servings
  • Oil – 4 tsp
  • Tomato Ketchup for better serving

For Chutney:

  • Coriander leaves
  • Mint Leaves as per your taste
  • Salt to taste
  • Green Chilies
  • Lemons
  • Water as required

Procedure :

  1. Grind all the coriander leaves, salt as required, curry leaves a little and make it into a paste.
  2. Now make the bread omelet. Take a bowl and beat the eggs, add it with salt, pepper, and other spices. Mix well.
  3. Heat oil in a frying pan. Pour the egg mix in and spread it out.
  4. Now place the slices of bread over the egg. Spread the remaining mix on it and cleave it for a minute.
  5. After a while, once the egg is cooked, turn it to the another side and let it too cook for some time so that the raw smell of egg goes off.
  6. Cook the another side of the bread too and spread some grinded green chutney to it.

Serving suggestions: Add some cheese slices for better taste, garnish it with slightly chopped onions and tomato ketchup.

Chicken Pakoda

For marinating the chicken pieces:

  • Ginger and garlic paste
  • Chopped onion
  • Green chilies
  • Lemon Juice
  • Salt
  • Tomato sauce if required to serve
  • Yogurt 1 cup
  • For batter preparation:
  • Gram Flour 1cup
  • Turmeric powder
  • Small amount of rice flour nearly 4 table spoons
  • green chilies finely chopped
  • salt
  • pinch of cooking soda
  • coriander
  • Spices or garam masala powder
  • Coriander powder

Steps for making :

  1. Marinate the chicken with the required ingredients such as yogurt, turmeric powder, spices powder, coriander powder, a little salt for half an hour.
  2. Prepare the batter by adding the gram flour, rice flour, pinch of cooking soda added with water.
  3. Dip the chicken pieces into the batter and put in the pan, deep fry in oil.
  4. Fry the chicken until it gets a brownish color.
  5. Garnish with green chili and coriander leaves.

Serves good with Chopped onions, Lemon, Coriander leaves

16.

Ponganal

Ponganalu  is a  Telugu word for fried batter balls in a special pan. This is very popular food in Andhra, Southern India and usually tastes much good with coconut chutney or ginger chutney.

Ingredients :

  • Idli batter
  • Water
  • 2 medium onion
  • Salt as per taste
  • Green chilies.

Procedure :

  1. Firstly, for the making of batter, the dal is soaked overnight and then made into a batter by adding some water to it.
  2. Mix all the above ingredients and keep aside so that all the flavors will be mixed with the batter.
  3. Apply some oil to the Ponganalu pan keep it on medium flame.
  4. Take a spoon and put the prepared batter into the ponganalu pan, and cook for some time until brown to get a nice color and better taste.
  5. If you want good color, you can once flip them to another side after cooked for some time on one side.
  6. Take them off and add some chutney or sambhar.

Serves great with Sambar, Coconut chutney, Ginger chutney.

Mirchi Bajji

Ingredients :

  • Green Chilies (long in size to get good stuffing in it)
  • Salt as needed
  • 1-1/2 cups gram flour
  • Cooking soda a pinch
  • Oil for deep frying

For Stuffing into the chilies we need :

  • Ajwain – based on the number of chilies you want to prepare.
  • Salt as required

Directions :

  1. To begin making the Mirchi Bajji Recipe grind the ajwain with little bit of salt and make it into a fine powder, keep it aside for further stuffing into the chilies.
  2. Take green chilies, cut lengthwise. Now, remove the chili seeds. Heat enough oil in for deep frying.
  3. Start filling the chilies with the above-grinded powder and then put a pan with oil sufficient for frying the Bajjis so that they completely immerse in it and fries on every side.
  4. While the oil is getting heated, add gram flour, salt, and baking powder to a bowl and make the batter by adding water. Whisk gently to avoid lumps.
  5. When the oil is hot enough to deep fry, take the chilies and dip them properly in the batter and put them in the oil carefully.
  6. Fry them until they turn into nice gold color and put them on a kitchen tissue to remove the excess oil from them.

Serving suggestions: chopped onions, lemon and coriander slightly spread on it.

Mutta Dosa

Ingredients :

  • Dosa batter –3 cups
  • Onions finely chopped
  • Eggs 3
  • Green chilies 2
  • oil 3 table spoons
  • salt – during preparation of batter

Preparation :

  1. First, mix the dosa batter with salt and keep it aside.
  2. Place a pan on a stove and switch on the stove.
  3. Meanwhile, take a bowl, break the eggs and mix the chat powder, garam masala powder, salt, some chopped green chilies as required.
  4. Pour and spread some oil on the tawa.
  5. Pour the dosa batter on it, and spread it out. Turn it to another side and cook it for a minute to get a nice color.

Rice Playa

Ingredients :

  • Basmati rice – 1 cup
  • Onion – 1
  • Green chili
  • Ginger-garlic paste
  • Tomato-1
  • Cashew
  • Mixed Vegetables
  • Mint leaves
  • Coriander leaves
  • Lemon juice
  • Turmeric powder
  • Red chili powder
  • Coriander powder
  • Biryani mix– 2 tsp
  • Salt as required

Procedure

  1. Cut all the carrots, cauliflower, spring onions, and keep it aside
  2. Take 2 cups of basmati rice and soak it the lukewarm water for 10 minutes.
  3. Now, cook the rice and drain the excess water in it if any.
  4. Take a pan with 3 tablespoons of oil and add the onions, turmeric powder, biryani paste or homemade mix, tomatoes, garam masala, salt, and the vegetables in it and cook it for 5 minutes.
  5. Then, add the cooked basmati rice to the vegetable mixture, cook it in medium flame and take it off.

Serving suggestions: Add some finely chopped onions, coriander, and a little bit of mango powder, fried cashews.
This is a spicy rice food and is similar to the preparation of Biryani. This is prepared in most of the areas in Hyderabad and people waits to have this on a pleasant chill evening ….!!!!!
