It is always said that our meal should be a balanced one, which means that it should contain every nutrient we need in proper quantity. So, in India, having Chapati, a vegetable, Rice, Dal and Salad is considered as ideal meal. But, what if you can get nutrients of these dishes in one single food item? What to know how? Masala Khichdi
This is a type of dish made with rice, which is spicy and healthy as well. It is often eaten as a meal in Indian households. So, here is a simple recipe to make it quickly!
Ingredients-
Split Moong Dal- ½ cup
Rice- ½ cup
Chopped Green Beans- ½ cup
Chopped Potato- ½ cup
Salt
Turmeric Powder- ¼ teaspoon
Butter- 1 teaspoon
Cumin Seeds- ½ teaspoon
Mustard Seeds- ½ teaspoon
Hing
Chopped Green Chillies- ½ teaspoon
Red Chilli Powder- 1 teaspoon
Shredded Ginger- 1 teaspoon
Garam Masala- ¼ teaspoon
Instructions-
Wash the Moong Dal and Rice properly. In a pressure cooker, add Beans, Potatoes, Rice, Dal, Butter, Salt and 3-4 cups of water.
Cook for about 2-3 whistles. After the cooker cools down, open it and mix the rice well.
Next, in a pan heat oil. Add Cumin Seeds, Hing and Mustard Seeds. Once these seeds start popping, add the Green Chillies, Ginger, Pepper and Salt. Mix well.
After 1-2 minutes, add Garam Masala to it and mix. Now, put the cooked rice mixture in this pan and add a little water.
Mix properly and allow it cook till the rice gets cooked properly. Serve hot with pickle.

Curd Rice
All the Indians, especially the South Indians have this very frequently. It is perfect choice for a meal in hot summer due to its refreshing taste. It has all the nutrients of a meal and is easy to make!
Ingredients-
Grated Carrot- ½ cup
Chopped Cucumber- ½ cup
Whisked Curd- 1 cup
Cooked Rice- 1 cup
Milk- 2 tablespoons
Chopped coriander- ¼ cup
Salt
Oil
Mustard Seeds- ½ teaspoon
Urad Dal- ½ teaspoon
Broken Red Chillies- 2
Hing- 2 tablespoons
Instructions-
In a bowl, mash the rice till it becomes smooth. Add the Curd, Cucumber, Carrot, Salt and Coriander to this bowl and mix properly.
Now, in a pan pour little oil and let it heat. Put the Mustard Seeds in it.
Once they start cracking, add the Hing, Uurad Dal, Red Chillies and fry them for about 50-60 seconds.
Pour this tadka over the rice mixture in a bowl. Let it be in refrigerator for about an hour and serve chilled.

Dal Pakwan
This is a popular dish among the Sindhis. As it contains Dal, it has the proteins in the right amount! So, try it yourself to save time and eat healthy food as well!
Ingredients-
Chana Dal- 2 cups
Oil
Cumin Seeds- 1 teaspoon
Chopped Onions- ½ cup
Slit Green Chillies- 1 teaspoon
Turmeric Powder- 1 teaspoon
Salt
Chopped Tomato- ½ cup
Coriander-cumin powder- 1 teaspoon
Chilli Powder- 1 teaspoon
Chopped Coriander – 1 tablespoon
Garam Masala- ¼ teaspoon
Maida- 2 cups
Wheat flour- 1 cup
Instructions-
Take a bowl with enough water. Soak the Chana Dal in it for about 3-4 hours. After this, drain the water.
In a pan, heat ghee. Add Cumin Seeds. When they crackle, fry onions and chillies in it.
Next, add Turmeric Powder, Chana Dal, cup of water and salt. Keep it for cooking for 15-20 minutes. Also, add the Tomatoes, Chilli Powder and Coriander-Cumin powder. Put the Garam Masala. Keep it for cooking for a minute.
In another bowl, knead Maida, Wheat Flour, Salt and Cumin Seeds into a soft dough along with water.
Deep fry the small balls made from the dough.
Serve hot with the Dal!
4.
Thalipith
Thalipith is a common dish prepared in Maharashtra. It is prepared using different types of flour and is very filling!
Ingredients-
Wheat Flour- 1 cup
Bajra Flour- 1 cup
Rice flour- ½ cup
Besan- ½ cup
Chilli Powder- ½ teaspoon
Turmeric Powder- ½ teaspoon
Cumin Powder- 1 teaspoon
Dhania Powder- 1 teaspoon
Oil
Salt
Instructions-
In a bowl, mix all the flour. In a pan, roast them lightly.
Next, add Chilli Powder, Dhania Powder, Turmeric Powder, Salt and Cumin Powder to it.
Put this in a bowl and make it into a soft dough using water.
Roll them into thin Rotis. Roast them in a pan till they are crisp and serve with chutney.
5.
Rajma Chawal
This is the favorite food item of a North-Indian. Its taste is finger-licking good and you will always want more after eating it!
Ingredients-
Soaked Rajma- ½ cup
Cooked Rice- 3 cups
Oil
Cumin Seeds- ½ teaspoon
Hing- ¼ teaspoon
Sliced Onions- ½ cup
Ginger-garlic paste- ½ teaspoon
Chopped Tomatoes- ½ cup
Turmeric Powder- ½ teaspoon
Chilli Powder- ¼ teaspoon
Dhania-jeera Powder- 1 teaspoon
Salt
Chopped Coriander- ½ tablespoon
Instructions-
In a pressure cooker, saute cumin seeds and hing in oil for about a minute.
Add ginger-garlic paste and onions to the cooker. Let it cook for about 2-3 minutes.
Put the tomatoes, chilli powder, turmeric powder, Dhania-Jeera powder and salt in the cooker and mix well.
Now, it is time to add Rajma. Add 1 cup of water as well. Let it cook for 4 whistles.
After 4 whistles, open the lid carefully and mix rice in it. Let it cook for 2 minutes while stirring it.
Transfer it to a plate and sprinkle coriander leaves over it and serve!
6.
Palak Paneer Paratha
Another Punjabi dish is here which is like a roti but has delicious stuffing in it. Yes, you guessed it right, it’s the time for Paratha. Let’s have a different type here that is Palak Paneer Paratha.
Ingredients-
Maida- 1 cup
Wheat Flour- 1 cup
Chopped Spinach- 2 cups
Lemon Juice- ½ teaspoon
Salt
Ghee
Crumbled Paneer- 1 cup
Grated Cauliflower- 1 cup
Chopped Coriander- 2 tablespoons
Chopped Green Chillies- 3-4
Instructions-
Using a blender, blend spinach, lemon juice along with little water to make a paste.
Mix both the flours together long with salt. Pour the spinach paste in this mixture and by adding water, knead into dough.
In another bowl, mix crumbled paneer, green chillies, coriander and cauliflower. Keep it aside.
Using rolling pin, roll small portions of the dough into a circle. Place 2 tablespoons of the paneer mixture in the centre and bring the edges together. Again, roll it into a circular shape.
Place it in a pan and put ghee around it. Let it cook properly and serve hot with curd!

Puri Sabji
Potato is a source of carbohydrates. It gives instant energy to us and so it is a perfect ingredient for one-dish meal.
Ingredients-
Peeled and boiled Potatoes- 4
Wheat Flour- 1 cup
Oil
Mustard Seeds- 1 teaspoon
Cumin Seeds- 1 teaspoon
Hing- ¼ teaspoon
Curry Leaves- 8-10
Slit Green Chillies- 2
Turmeric Powder- ½ teaspoon
Salt
Scraped Coconut- 2-3 tablespoons
Chopped Coriander Leaves- 1 tablespoon
Instructions-
In a bowl, knead the flour into dough along with water and 2-3 tablespoons of oil.
Next, in a pan, heat oil and put the mustard seeds in it. Once they start spluttering, add hing, curry leaves and cumin seeds.
Next, saute green chillies in it. Chop the potatoes and mash them after putting into the pan. Mix turmeric powder and salt in it.
Pour some water and let it cook for 5-6 minutes.
Now, take the dough. Roll them into small puris and deep fry them till they are puffed.
Serve hot puris with delicious aloo ki sabji!

Egg Biryani
We all are aware that we can get a lot of proteins from the eggs. Eggs can be eaten at any time in the day to satisfy our hunger. So, here is a one-dish meal recipe made from eggs!
Ingredients-
Yogurt- 1 cup
Garam Masala- 1 teaspoon
Black Cumin – 1 teaspoon
Coriander Leaves- 1 teaspoon
Biryani Masala Powder- 1 teaspoon
Fried Onion- 1 teaspoon
Green Chillies- 2 tablespoons
Oil
Salt
Mint leaves- 1 bunch
Ginger-garlic Paste- 1 tablespoon
Chopped Onion- 1 cup
Eggs- 8
Rice- 2 cups
Butter
Instructions-
Wash the rice for 2-3 times in water and soak it for an hour. Till then, boil the eggs in water. Shell them and cut them into four pieces.
Heat butter in a pan. Fry the onions in it and later add all the spices to the pan. Add the biryani masala and curd as well.
Next, add 2-3 cups of water, and once it begins to boil, add the rice to it.
Cover the pan with a lid and let the rice cook properly.
Next, add red chilli powder, eggs, besan and salt. Let the eggs be covered with the spices and masala.
Let it cook properly and serve hot on a plate.

Hakka Noodles
One of the most favorite dishes of all the kids is ‘Hakka Noodles’. So, one day why not treat them with the dish of their choice which is as healthy as the regular meal? Here is a simple recipe for making it quickly!
Ingredients-
Chopped Garlic- 2 teaspoons
Broken Red Chillies- 2
Shredded Cabbage- ¼ cup
Sliced Capsicum- ½ cup
Chopped Spring Onions- ¼ cup
Chopped Carrots- ¼ cup
Boiled Noodles- 3 cups
Oil
Soy Sauce
Salt
Instructions-
Take a pan and saute the red chillies and garlic for a minute in heated oil.
Add all the chopped veggies to this pan. Let it cook for another 2-5 minutes.
Next, put the noodles, soy sauce, pepper and salt in the pan and mix well. Let it cook for 2-3 minutes.
Serve hot!

Sprouts Pav Bhaji
We all have eaten the traditional dish- Pav Bhaji which tastes yummy. Now, let’s make it a little bit healthier by adding a nutritional twist to it!
Ingredients-
Boiled Moong- 2 cups
Butter- 1 teaspoon
Oil
Chopped Onion- ¾ cup
Chopped Tomatoes- 2 cups
Chilli Powder- ¼ teaspoon
Pav Bhaji Masala- 1 teaspoon
Salt
Mashed Potatoes- 1 cup
Boiled Mixed Vegetables- 1 cup
Chopped Coriander- 2 tablespoons
Lemon Juice- 1 tablespoon
Pav/Bread- 8-10
Instructions-
In a non-stick pan, fry the onions in little oil. Next, add the tomatoes, green chillies, pav bhaji masala, ¼ cup of water and salt to this pan.
Stir it in a while and let it cook for 3-5 minutes.
Next, add the potatoes and all the vegetables, mash it and allow it to cook for 2-3 minutes.
Now, add the moong, lemon juice, salt and coriander to it. Finally mix it properly and let it cook for 3-6 minutes.
Serve hot with Pav!

Chickpea Pulav
Chickpea in Hindi is known as ‘Chole’. Usually, it is used in making many different types of sabji, but here is a recipe that uses Chickpeas in the Pulav.
Ingredients-
Rice- 1 cup
Cooked Chickpea- ½ cup
Chopped Tomatoes- ¼ cup
Chopped Potato- ½ cup
Chopped Spinach- ¼ cup
Bell Pepper chopped into cubes- 1 cup
Oil
Cumin Seeds- 1 teaspoon
Hing- 1/8 teaspoon
Bay Leaf- 1
Shredded Ginger- 1 tablespoon
Chopped Green Chillies- 1
Salt
Turmeric Powder- ½ teaspoon
Mango Powder- ½ teaspoon
Garam Masala- ¼ teaspoon
Instructions-
In a bowl with full water, drench rice for 10-15 minutes.
Next, add cumin seeds to heated oil in a pan. Once they crackle, add ginger, green chillies and turmeric powder in it.
Next, put the tomatoes and let them cook for 2-3 minutes. Now, add the chole and potatoes to the pan and let it cook for 8-10 minutes.
Now, add spinach, rice and bell pepper to the pan. Pour in water so that rice is cooked properly. Put a lid on the pan and allow it to cook for 12-20 minutes.
Once the rice is properly cooked, mix mango powder and garam masala in it.
Serve hot on a plate.

Chicken Chowmein
The non-vegetarian food is also very delicious and nutritious too. So, here is a one-dish meal recipe for all the chicken lovers!
Ingredients-
Cooked and chopped Chicken Breasts- 2 cups
Pasta- ½ cup
Chicken Broth- 3 and ½ cup
Soy Sauce- ½ cup
Minced Garlic- ½ teaspoon
Salt
Red Pepper flakes- ½ teaspoon
Asian Vegetable Mix- 3 cups
Apricot Jam- 1/3 cup
Instructions-
In a large vessel, mix chicken, broth, pasta, garlic, salt, soy sauce, vegetables and red pepper flakes.
Stir it and let it cook for 10-12 minutes. Once the pasta is properly cooked and the sauce is absorbed, add the apricot jam. Stir well.

Pongal
Pongal is a dish made of rice and served with lot of ghee over it. Though it is very simple to make, it is very delicious to have and healthy as well!
Ingredients-
Pepper Corns- ½ teaspoon
Curry Leaves- 2-3
Cashew Nuts- ¼ cup
Green Chillies- 3-4
Cumin Seeds- ¼ teaspoon
Salt
Ghee
Hing- ¼ teaspoon
Moong Dal- 1-2 cups
Rice- 1 cup
Instructions-
In a pan, dry roast the moong dal and rice for about 2-3 minutes.
Next, in a pressure cooker, mix salt, moong dal, rice, green chillies and cumin seeds. Pour in water as well. Let the rice cook properly.
Next, melt ghee in a pan and add cashew nuts, cumin seeds, hing, curry leaves, ginger and peppercorns to it.
Pour this tadka over the rice and mix well. Serve hot with ghee over it.

Tomato Rice
This is very simple and delicious rice. Rice is cooked in juicy tomatoes with spices without any another vegetables. Specially made in South India, tomato rice is a real treat!
Ingredients-
Cooked rice – 4 cup
Tomatoes – 4
Onion – 1
Red Chilli Powder
Chopped Coriander
Chopped Ginger
Chopped Green Chilli
Chana Dal – ½ teaspoon
Urad Dal – ½ teaspoon
Mustard Seeds – ¼ teaspoon
Jeera – ¼ reaspoon
Hing – 1 pinch
Curry leaves
Oil
Instructions-
Heat oil in a kadhai and make tadka using mustard seeds, jeera and hing.
Add chana dal, urad dal and curry leaves in it.
Mix chopped green chilli, ginger and onion in it and fry for 5 minutes.
Put chopped tomatoes in it and keep frying till tomatoes are cooked. Mix cooked rice in it and stir well.
Sprinkle coriander over it and serve hot.

Baked Corn Potato Dish
It is a very good combination of sweet corn and cheese mixed with potato. It has to be served hot so that you enjoy to the fullest!
Ingredients-
Sweet Corn Kernels (boiled)- 250 grams
Boiled Potatoes – 2
Grated Cheese – 2 cubes
Milk – ¼ cup
Butter – 1 tablespoon
Salt
Black Pepper Powder
Chopped Onions – ½ cup
Chopped Green Chillies
Instructions –
Melt some butter in a non-stick pan. Fry chopped onions and green chillies in it.
Now mix boiled potato, corn and some cheese and allow it to cook. Add salt and pepper for taste.
Take a baking dish and grease it with butter. Put this mixture in the baking dish. Spread milk and remaining cheese over it. Bake in oven for 10 minutes and serve hot.

Paneer Kulcha

Curd – 2 teaspoons

Grated Paneer – 250 gms

First make dough by mixing maida, salt and curd in warm water. Knead well and cover it with cloth. Let it stand for 2 hours.
In another bowl, mix grated paneer, chopped onion and coriander, green chilli, jeera powder and salt. Now divide dough into equal portions.
Take one portion and roll it. Put some paneer stuffing over it and seal the ends. Roll it again.
Roast this kulcha on hot non-stick pan by applying butter from both sides ill light brown. Serve hot with any raita or pickle of your choice.

Vegetable Pasta
Famous dish from the Italian Cuisine, Pasta is a very tasty and all-time favorite dish. But, here is a different pasta which is very pleasing to eyes and to our taste buds as well!
Ingredients-
Pasta – 1 cup
Onion – 2
Tomato – 1
Capsicum – ½
Salt
Pasta Sauce – 1 packet
Oil
Instructions–
Take a pan and keep water boiling and add pasta in it with some oil. Cook the pasta till it becomes soft and remove excess water from it.
Now keep a non-stick pan on stove and put some oil in it. Make thin slices of onions, tomatoes and capsicum. Stir and fry them for 5 minutes. Add cooked pasta and salt to it and mix well. Now add pasta sauce and let it cook for 5 minutes.
Serve hot.

Dal Dhokli is a perfect one dish meal as it is combination of tasty dal and hot dhokli of flour. To enhance its taste, it is always served hot and with lot of ghee.

Whole Wheat Flour – 1 cup
Besan – 2 tablespoon

Chilli Powder – 1 teaspoon
Jeera Powder – ½ teaspoon
Turmeric Powder –1 pinch
Hing- 1 pinch
Tuwar Dal – ¾ cup
Kokam – 4 soaked in water
Curry leaves
Jaggery
Mustard Seeds

Jeera Seeds
Instructions-
Mix whole wheat flour, salt, chilli powder, besan, jeera powder and turmeric in a bowl. Knead it with water and make a soft dough.
Now, wash dal and drain it. With water added, cook the dal in the pressure cooker for 15 minutes. Allow it to cool.
Take a deep pan and put it on gas stove. Add 2 teaspoon oil and make a tadka with mustard seeds, jeera seeds,hing and turmeric.Put some curry leaves, cooked dal and 4 cups of water in it.
Mix it well and as it starts boiling add chilli powder, jaggery and kokam juice. Add salt. Now, make chapatis from dhokli dough. Cut each chapati into diamond shaped pieces.
Put dhoklis into boiling dal and boil it for 10 -15 minutes. As dhoklis are cooked, serve it in a bowl with chopped coriander and ghee.

Bisi Bele Bhaat
This is a traditional spicy rice made with aromatic spices and tasty vegetables and dal. It is very famous dish in Karnataka.
Ingredients-
Rice – washed and soaked 1 cup
Tur Dal – washed and soaked ½ cup
Chopped Potatoes – 1
Chopped Beans –50 grams
Chopped Kaddu – 50 grams
Chopped Carrot – 50 grams
Chopped Red Pumpkin – 50 grams
Raw Peanuts – 50 grams
Tamarind Pulp – 2 teaspoon
Salt
Oil
Jaggery
Curry Leaves
Dhania Seeds- 1 teaspoon
Jeera Seeds – 1 teaspoon
Red Chilles – 5
Grated Coconut – 2 teaspoon
Urad Dal – 1 teaspoon
Bengal Gram Dal – 1 teaspoon
Instructions-
Heat some oil in a pan and add dhania seeds, jeera, urad dal, Bengal gram dal and red chillies. Roast it on low flame. Keep it to cool and make a paste with little water in mixer.
In a pressure cooker,heat oil. Add curry leaves, turmeric, all chopped vegetables, rice, dal and peanuts. Fry it for 5 minutes. Add jaggery, salt, tamarind pulp and paste. Add 4 cups of water and close the lid of pressure cooker. Let it cook for 15 -20 minutes.
Delicious Bisi Bele Bhaat is ready to be served with ghee and papad.

Vegetable Noodles Basket
This is a pretty looking one dish meal with crunchy vegetables and fried noodles.
Ingredients-
Parboiled Hakka Noodles – 4 cup
Corn Flour – 3 teaspoons
Salt
Oil
Chopped Carrot – ¼ cup
Chopped Beans- ¼ cup
Chopped Onion – ¼ cup
Chopped Babycorn – ½ cup
Chopped Capsicum- ¼ cup
Finely Chopped Garlic – 2 teaspoons
Finely Chopped Ginger – 2 teaspoons
Schezwan Sauce- 2 tablespoons
Tomato Sauce – 2 tablespoons
Instructions –
Put the parboiled noodles on a sheet for 20 minutes. Now, mix the noodles with salt and cornflour.
Heat oil for deep frying in a kadhai. Make equal portion of noodles and keep one portion noodles on a strainer and press another strainer on it to make a basket. Keep pouring oil from all sides and fry the noodle basket from all sides.
Take a big nonstick pan. Heat oil in it. Put chopped ginger, garlic and chillies. Fry them for 1 minute. Add onions and fry for another 1 minute. Add other vegetables and baby corn and let it cook for 5 minutes.
Add schezwan sauce, tomato sauce and salt. Mix well.
Now make equal portion of stir fry vegetables. Take a noodle basket put some stir fry vegetables on it and serve immediately.
